I've been cooking since I was 8 yrs old and back then I knew 100 ways to make a pound of ground beef stretch to feed 4 of at supper time, so I enjoy making meals of all kinds with 47 years of experience and many more supplies in my pantry, cupboards and freezer including Moose, Caribou, and fresh caught Alaskan Salmon.
My favorite things to cook
I guess I like anything that is quick and easy on week nights, and easy clean up, too. Quick 30 minute meals if you know what I mean. Ever try "Cowboy Spaghetti" of Rachel Ray's ? One of our favorites, easy and yummy with a salad of greens.
My favorite family cooking traditions
Mostly my husband loves the smell of mexican food when he comes in the door., which includes chicken enchiladas, spanish rice, tacos, chicken mole' green chili(pork) and chili rellanos my way, nachos and pumpkin empanadas. My brothers say I can make all this just like mom's. What a compliment! In my mom's house when she entertained we passed a towel around to wipe our brows as our tops got heated up...no, everyone had their own napkin but we teased her that way. Her salsa had a good twang.
My cooking triumphs
Right now I am taking the time to learn breads but have not quite mastered it, but I'm not done yet. Have just discovered that my bread machine is a 1 pounder and most recipes are 1 1/2 to 2 pounders. whoops .....you get the picture about the dough over running my machine???
My cooking tragedies
I'm sure I have had some tragedy but cannot redily think of any in particular, I have learned to bake cakes and pies, I can make casseroles out of leftovers, I can do thanksgiving dinner, I can grill, I love rotisserrie, I have mastered canning from the garden(a real frugal and delicous concept)Pickling is another delight.I've not gotten to into gourmet however I'm on the breads now and If anyone has any tips on not letting the bread fall after raising...let me know, please. Happy cooking to you all and look for 'Cowboy Spaghetti" in the spaghetti section, has a little twist but you'll like it if you are open to non traditional Italian spaghetti. My husband loves it.
