With this carrot cake I was pretty true to the recipe, only substituting pumpkin for applesauce and pecans for walnuts. I used the Cream Cheese Frosting II recipe.

Photography Notes: This is a very meaty and moist carrot cake. My family loves it. I cut the cake because once a cake is frosted, they all look the same.
