White Bean Chicken Chili
I am giving this 5 stars eventhough I didn't follow the recipe exactly - I didn't have some of the ingredients. I used 2 cans of tomatoes becuase I didn't have tomatillos. I didn't have the chilis or coriander (i had whole but i couldn't crush it) so I substituted with some chili powder, red pepper flakes and Cheyane red pepper. I added more spices and S&P to my tastes. Also didn't have fresh corn so I used canned. It still came out so yummy! I served it to some friends on a late night and it worked wonders! It was especially good with sour cream and cheddar. I'm going to see what the chili cookers at work think about it. I be they'll be impressed.
