About this Cook
I'm a 28 year old office manager and have been married to an amazing man for the past 5 years. He's a very willing guinea pig when it comes to my cooking! We are the quintessential DINKs - Double Income, No Kids. We live in a rural suburb east of Seattle. I love, love, love to cook! I learned the majority of my skills from my Grandma. She is a fabulous cook!! She taught me how to "work with what you've got".
My favorite things to cook
I love to experiment with recipes. I'm also a big fan of converting recipes to "Hobo Style" - anything I can whip up with ready-made, convenience items in a minimal amount of time. Think "Semi-Homemade w/ Sandra Lee" type stuff; Though I don't really care for any of her recipes. Ironic. :)

My cooking tragedies
When I was younger I attemped to make chocolate chip cookies. Once they were done I realized that I had neglected to add salt to the recipe. So, being the problem solver that I am I just went ahead and sprinkled some on top of each cookie. GROSS.

Lazy Bruschetta
This turned out great! I needed a recipe to use up the TONS of tomatoes in my garden this year and this fit the bill. After reading the reviews, I changed a couple of things. I cut the garlic salt out completely and instead used a garlic infused olive oil. To the oil I added minced garlic, red pepper flakes and italian seasoning and let that sit for about four hours to meld. Brushed fresh sourdough bread with the oil, topped with diced tomatoes and sprinkled with shredded mozzarella and parmesan. We're going to try this on the grill tomorrow night with more tomatoes and more mozzarella. YUMMY!!

Slow Cooker Italian Beef for Sandwiches
This turned out great!! Tastes just like the Italian Beef I had in Chicago. I used a 3 pound roast, but left all of the spice amounts the same. I didn't have onion salt, so subbed it with 3/4 tsp. onion powder and 1.5 tbsp. dried minced onion. Also added three beef bouillon cubes, 2 tbsp. jarred minced garlic and doubled the italian dressing mix. Nothing ever tastes quite right in my slow cooker, so I cooked this in my cast iron dutch oven at 350 for 90 minutes. Pretty easy, even for a weeknight meal!

French Bread
This turned out fantastic!!! The only changes I made was to use 5 teaspoons of yeast, additional salt, a little butter and only enough flour to make a nice dough (maybe 5 1/2 cups). Such a versatile bread too - made everything from meatball subs to grilled cheese sandwiches with it. Delicious fresh out of the oven with a little butter. I will definitely be making this often!
