Elephant Ears

this recipe confused me, it calls for 8 Tlbs. butter in ing. list, but only 1/4 cup in directions, so i combined this recipe with another to make the perfect elephant ears. increased flour to 2 cups and used 1/2 cup buttermilk.

it's just what i was looking for but didn't have time to refridgerate for 2 hours, following another review, i left out the yeast, egg and water, and used buttermilk in place of scolded milk, and reduced baking time down to 5 minutes as mine were rolled very thin. will definatly make again and again.

Cake Mixes from Scratch and Variations

this is the most versitile cake mix i have used. my daughter had a class project and made the yellow, chocolate, and spice varieties. made them into cupcakes, taking only 19 minutes to bake. she arranged the cupcakes into the shape of a guitar, then iced and decorated to look like a guitar. it turned out perfect.

Cinnamon Coffee Cake I

this is the one iv'e been searching for. i used 1 cup white and 1 cup brown sugar and brown sugar for the topping, sustituted oats for 1/2 of the nuts and pecans instead of walnuts. the only thing i will do differently next time is to mix a little melted butter into topping to make it more of a struesel.

not what i was expecting. also the recipe says to bake 20 - 30 minutes, mine took 45 minutes, sank in the middle, and was over cooked along the edges. will not make this one again.

Vegan Brownies

these didn't have the cakey texture i was expecting, not bad though. i substituded a cup of espresso for the water, but it lost the coffee flavor i was looking for. will make again with a few more changes.

Tuna Casserole III

this was a favorite of mine growing up, but we called it "mock chicken casserole". i now make it for my own family with the addition of hard boiled eggs, peas, broccoli and shredded cheese.
