About this Cook
Mom of 2 wonderful daughters, although they don't live with me. My email is toms.cartbabe at yahoo.com.
My favorite things to cook
I enjoy cooking and baking just about anything. My favorites would be whatever someone else enjoys eating (i.e. my favorite thing to cook for my youngest daughter would be her favorite -- macaroni and cheese). I also like to try to recreate foods that my family enjoys. After a while, whenever my daughters would try something that they enjoyed they would ask, "So can you make this too?"
My favorite family cooking traditions
I am of Polish decent and enjoyed watching and helping my Mom and Grandmas in the kitchen. My fondest memories are of the Easter and Christmas holidays.
My cooking triumphs
I enjoy any type of cooking and baking, but I guess making the cakes for my Mom & Dad's 25th wedding anniversary and my brother's wedding would be two of my baking triumphs.
My cooking tragedies
About 2 years ago when I was baking pie crust cinnamon rolls for my daughter's graduation party. Had the 2 dalmatians baracaded in the living room and the kitchen table covered with them to cool before packaging them up. Left the kitchen to get something and when I came back the female was standing on the almost empty table. There were only 6 left. I could have cried.

The Best Vegetarian Chili in the World
Great chili recipe. I made it without the crumbles and subbed cans of tomatoes with green chiles instead of using separate cans of each. I also added one can of crushed tomatoes since I prefer my chili thicker. Everyone loved it. Will definitely be making this often.

Blueberry Pumpkin Muffins
Nice bread with an interesting flavor. I needed to make these sugar-free, so I used splenda, dark agave syrup and whole wheat flour. I also used unsweetened applesauce for most of the butter. H2 and I both enjoyed it and will definitely be making it again.

Caribbean Zucchini Bread
Since I've seen the rave reviews for this I decided to make it for H2's last day at work to share with his staff. Since H2 is diabetic, I used all whole wheat flour and subbed splenda and sugar-free maple syrup for the brown sugar. The batter was a little dry so I needed to add 1 cup of water. It smelled amazing while baking and I could hardly wait to "sample" some before sending it out. Thanks Tahoegirl for the great recipe.
