This is a quick and easy and highly customizable recipe. We use a Bold and Spicy bloody mary mix and add celery, onions, diced tomatoes,... the list goes on depending on our mood. We have added potatoes, rosemary, and mushrooms also. We LOVE playing with this recipe, and it is super fast and easy!! However, I almost never use the whole bottle of Bloody Mary Mix or it does get a little watery.

This recipe was very good. My husband loved them. The only thing I would do differently maybe is add some spices to the breadcrumbs. I will definitely make these again.

This was very easy and VERY delicious. I baked my egglplant on a pan lightly drizzled with my homemade basil oil. We served it with pasta, bread and a mixed greens salad. It was great and my guests LOVED IT.
