Mother's Ham Casserole
This wasn't worth making. I used thawed chunk style hash browns, and already cubed cooked ham. I cooked the potatoes for just a few minutes, as I have had wonderful results in the past using them, and they turned to mush. The ham I cut into smaller pieces. It turned out more like mashed potatoes with ham. I tasted the sauce when it was done, and it was AWFULLY bland. I did what another reviewer said, and added the Philadelphia Cooking Creme, Garlic flavor. It was SO strong with garlic, I will never fear Vampires again. This could be a good base recipe, but you will have to tinker with it a LOT to get the results you want. I won't ever be making this mess again!

Pepperoni Casserole
Double the sauce, cut the cottage cheese in half, or I wouldn't make it. Made this for a friend, and her family. They had to add sauce to their plates to get through it, and try to scrape half the cottage cheese off. Also, if you want it to have flavor, add onions, garlic, maybe peppers and oregano. When I made it, the sauce BARELY coated the pasta. It just really needs more sauce, less cottage cheese. Won't make this again.

Spinach Quiche
You can make this a lot easier, by using a can of spinach. Get ALL the liquid mashed out of it, then mix ingredients and cook. I have never had any other quiche in my life, but adore this one! I do not use the croutons on top, as we don't care for toppings on things. Just drain the spinach, mix everything up, and put in quiche dish and cook for an hour. It's awesome. My picky teenager, melts when I make this, she loves it SO much. Just made it yesterday for my best friend. She said it got better with every bite! This is a must make, if you like spinach.
