About this Cook
I'm a South Jersey girl. I've been cooking or in the restaurant business all my life. My parents owned a deli & a restaurant in a private golf course, so my dream is to someday have my own, hopefully with MY children & Grandson. A real Italian family place.
My favorite things to cook
Of course it's Italian, but I'm quite the baker. I love when people come to me & say how much they enjoy my food. I can pretty much make anything, but I always put my own spin on things & tweak it the way I like it. Making things more healthy is very important to me.
My favorite family cooking traditions
Christmas Eve dinner is a big thing in my family. And before my Aunt became ill,(she recently passed away, matriarch), we would all go to her house before Easter & make "Bizza", Easter egg pie, & stuffed artichokes. The recipe for the egg pie is from my great grandmother from Italy. It takes ALL day! Great memory, great food, we looked forward to it every year.
My cooking triumphs
It's hard to say because I do it everyday. Bracciole is a big hit, usually, but being in a SMALL(pop.1500)dairy town now, I can't make what I want & even have them know what it IS let alone try it! I even made a stuffed artichoke here ONCE, & people thought it was some kind of a dessert!
My cooking tragedies
Without a DOUBT, Watermelon Upside-Down cake. My fault for following a recipe exactly. It was horrid. Do not try this at home!! Lol...

Autumn Cheesecake
All the reviews are pretty much spot on. I make cheesecakes for my job & use the basic 3 8 oz. cream cheese, 3 egg, 3/4 c. sugar, 1 tsp. van. recipe. For the top, after microwaving the apples, lay in concentric circles. If you want to save having to use more butter/sugar, brush apples with melted apple jam after cooling cake in the oven for an hour. Pretty!

Virginia Apple Pudding
It was great! Made it for work, needed an extra dessert for a "Fall Favorites" menu real quick. I used extra apple, mixing it into the batter. I also added an egg. Served it with a little fresh cream drizzle dusted with a bit of cinnamon, wonderful...Could also make it to a brunch menu...

Mock Tuna Salad
This is pretty close to a recipe from my diet page,(lost 55ibs. in 2 1/2 months), with the beans being mashed with a fork, VERY little LF mayo, red onion, chopped cucumber, lemon juice, black pepper, & a bit of chopped flat-leaf parsley. The lemon juice help you to not need the salt. Really good stuff!
