Pudding-Topped Fruit Salad
Made this for a Memorial Day party - it was great as a snack or dessert. I made it in a pretty truffle bowl as pictured. The only things I did different was doubled the pudding mix so I could do 2 layers of the pudding (which btw is great by itself). I also used the fat free sugar free pudding (so its 1.4 oz box instead of 3.4) also used fat free sour cream. Oh and I didn't use bananas - just in case they turned brown it didn't want to ruin the look. I did use both raspberries and blueberris. I think the pineapple flavor really made this a hit - so whatever you do, don't omit the pineapple!!!

Cream of Cauliflower Soup II
Awesome and EASY! I didn't have any sherry. I used frozen cauliflower (2 bags) but fresh potatoes and carrots. I made the equivilent of 1.5x the recipe to serve 9. I also added 3 slices of lite swiss cheese and used evaporated skim milk. The cheese and evap milk added protein and reduced fat and carbs.

Awesome Sausage, Apple and Cranberry Stuffing
First time I ever made stuffing - once I saw the recipe and reviews I told my mother-in-law I would give her a break this year from her traditional hamburg stuffig (yuck). Would you believe everything was ready to eat and she said "where is the stuffig" - i had forgot to put it in the oven (I didn't stuff the bird) Anyway - 12 min in the microwave (for a double recipe) did the trick and everyone RAVED about it and I now need to continue making this. Changes: I did omit the turkey liver and used all fresh herbs but really didn't measure anything - I also used crasins - and the jimmy dean sage sausage (but didn't double the sausage amount) - also after re-reading the recipes, I just realized I didn't use unsalted butter - also couldnt find turkey broth and used 2 cans of chicken broth - so it seems from everyones comments, you can play with the recipes and still get fabulous results. Had a great leftover turkey, stuffing and cranberry sandwich today too! Thanks for this great recipe!
