Potato Chip Casserole
This casserole wasn't all to my taste, but I think it's a good base. I think it needs more seasonings, especially in the meat. My husband suggested using one can of cheddar cheese soup as well as cream of mushroom soup with shredded cheddar on top... I did like all the textures going on - the corn, beef, chips, etc. but for me it really needs a nice kick. Maybe southwest seasonings or something like that.

Mushroom Stuffing Balls
These are amazing -- I added a little bit of white wine I had leftover, and boy did that bring out a nice flavor! Though mine didn't ball up very well, they still turned out delicious! Perfect little appetizers.

Rice and Lentil Casserole
This recipe is as many say, basic and homey. But with the HOT pork sausage it is kickin! My husband and I have eaten this several times in the last few months, each time customizing it to whatever veggies we have available... We add just a little less than 1/2 c. rice, and just a little over 1/2 c. lentils. What a great way to add lentils to the diet, while still enjoying a hearty and tasty meal.
