Pumpkin Turkey Chili

Delicious!! Healthy alternative to regular chili. The pumpkin doesn't make it taste different, but it is in there for nutritional value, I guess if you are trying to sneak in more vegetables for the kids.

Very good! Added half a chopped onion and bell pepper! Topped with 1/2 cup ketchup with a tbsp brown sugar mixed in.

Boudreaux's Zydeco Stomp Gumbo

Out of this world, fantastic Gumbo from a New Orleans girl! I also cut down on the olive oil/flour to 3/4 cup. The roux takes about 35 minutes to get that nice golden brown color. I simmered the veggies longer than 40 minutes...really takes longer for the flavors to blend. Refrigerate overnight before serving for the flavor to really develop. Left out the red peppers, would have been too spicy with it. Also did about 6 cups of chicken broth and 8 oz Guiness beer. Time consuming to make, but worth it!

Pesto Chicken Florentine

Easy to make, tastes divine. I used leftover rotisserie chicken that I had, and saved some time. Also used 2 packets of Garlic Alfred Sauce Mix (McCormick) and the entire bag of 9 oz spinach. Added 3 tbsp of pesto for a stronger flavor. It came out brilliant!!

Mexican Baked Fish

Easy as can be, and very, very yummy. Have used cod, as well as salmon. This recipe takes away the fishy taste of salmon.

White Chocolate Fruit Tart

Excellent. Very easy to make, very eye pleasing with the colorful fruits. I don't care much for canned pineapple, so I used Mandarin oranges (the juice for the glaze), strawberries or raspberries, and kiwis. Have made it 3 times in 2 weeks!

Marie's Easy Slow Cooker Pot Roast

Very good, very easy. Didn't have any celery, so omitted it. Also left out the potatoes, and instead thickened the gravy with cornstarch before serving it over mashed potatoes. Yummy!!!

Quick and Easy Chicken Noodle Soup

Very good recipe. Easy to make. I added a can of Rotel tomatoes (drained) for a little spicy kick. Used canned chicken as well for convenience. Will be making this again!
