About this Cook
I was born and raised in Tucson, AZ, and moved to Lincolnshire in England 3 years ago. Food has always been an important part of my life--a lot of my memories involve what I was eating at the time of a given event, and the other details can get pretty fuzzy!
My favorite things to cook
I have a huge sweet tooth, so I love baking--especially cakes and cookies. I also love Italian and Mexican food, which we have at least once a week.
My favorite family cooking traditions
Christmas baking with my mom and brother was always a ton of fun. As a budding cook in my early teens, I used to make a simple but delicious lasagna for my family, and that's when I discovered how much I loved being able to give people good-tasting food.
My cooking triumphs
I made my first (and only, so far) solo Thanksgiving dinner the year I moved to the UK, and it was wonderful to share the occasion and the food with my husband and his family.
My cooking tragedies
Fortunately, I haven't really had any "tragedies." Sometimes things don't turn out quite right, but I don't let it get me down. The worst thing I've made was a pathetic attempt at corn bread for Thanksgiving, but using polenta. Big mistake!

Oregano Cubed Potatoes
When I bit into these tender, fragrant potatoes, it took me back to my childhood eating gyros and Greek potatoes in Marathon Greek Restaurant in Tucson, AZ. Thank you for an incredibly tasty blast from my past--I shall be making these for years to come! Dried oregano seems to work just as well.

Moist, Tender Spice Cake
Spice cake is one of my favorite American cakes, and having lived in England for the past year and a half, I really appreciate being able to make a cake that really brings me back home. I made this particular cake for my British in-laws at Thanksgiving last year. It was a huge hit with my husband's family, so a few weeks ago I made it again in cupcake form for my co-workers. It is so warm and moist, and British buttercream icing really complements it well. The cupcakes kept for over a week, and they weren't even tightly covered--just a bit of foil draped over them! This recipe has turned out beautifully every time I've made it. This is a permanent addition to my recipe collection!
