PHILADELPHIA Pumpkin Swirl Cheesecake

A creamy, not-to-sweet cheesecake. The crust is very good. I added on the sour cream topping from the Perfectly Simple Pumpkin Cheesecake recipe, and it added the perfect touch!

Pumpkin Apple Streusel Muffins

I make these every Fall- they are so good! I add toasted, chopped pecans to the streusel topping for some crunch. These are a family tradition!

Speedy Salmon Patties

So quick and easy! I used flax instead of the crackers, and added in finely grated carrot. They were a bit crumbly, but that was probably from the flax. I did sautee the onion before using, and used boneless/skinless salmon. The kids loved them.

This is delicious! I did use more apples than called for, but otherwise, as written. I have already made it more than once this week. Toast the nuts before you use them for a truly yummy treat!

Chewy Whole Wheat Peanut Butter Brownies

Better than a PB&J! I always use butter, and natural PB. The batter is thick, but they bake up moist and chewy. I loved that they weren't too sweet- a great alternative to a chocolate brownie, and one that the kids can eat more than one of without bouncing off the walls!

Chocolate Frosting II

I really didn't get the flavor of this frosting. Mine tasted so strongly of vanilla. I would recommend using less. I ended up adding some melted chocolate to mask the vanilla flavor. The consistency was great, with the addition of extra milk, and it spread easily. But maybe start with a tsp. of vanilla, and add to taste before putting in the whole TBSP.

Banana Cake VI

Very delicious! I made a half-recipe, and it fit well into a 10x7 pyrex pan. I threw in some chocolate chips I had. I followed the baking directions, and it was so soft and moist! I didn't put it in the freezer though, since I was worried about putting a hot glass pan direct in the freezer. I will make this again!

Overnight Berry Coffee Cake

Delicious! The only diary I had in the house was vanilla ice cream, so I melted it ,and mixed in some lemon juice to make "buttermilk". I left out the white sugar to make up for the sugar already in the ice cream, and used half whole wheat flour. We all loved it!

Italian Summer Squash Polenta Bake

This is a 5 star recipe, if you make your own polenta! I highly recommend the Basic Cheese Polenta from this site. The pieces of fried polenta on their own are delicious! Make them into this meal, and it's even better! I omitted the onion and carrots, and added in fresh steamed, chopped spinach. I am going to make this again tomorrow, my family couldn't get enough!

Beef Barley Soup

This was a great base for what became a hodge-podge of leftovers. I had no beef, so used sausage. No onion or celery, so used cabbage and mushrooms. The soup is hearty and has a wonderful "vegetable" flavor- it tastes like what you put in it, not salty or overspiced. I added the frozen peas as I served it to the kids- they cooled down the soup enough for them to eat it right away.

Basic Cheese Polenta

Delicious!! My first time making polenta, and my family and I thought this was very, very good. It's so quick and easy to make. I chilled it in a 9x13 pyrex, and used a glass to cut circles. I fried them, and was eating them straight out of the pan, before they even got a chance to be used in my recipe! My only recommendation, to make this 5 stars: Leave out the salt!! With the parmesan cheese added, this polenta is plenty salty enough already.

Lemon Pie II

YUM! I used 1/2 cup fresh lemon juice, with a little zest for a stronger flavor, and made a graham crust using cinnamon grahams. It was thick and creamy, and refreshing on such a hot day!

Grandmas Cowboy Cookies

YUM! A really tasty combination of textures and flavors. I had thought the 2 cups of sugar would be too sweet, but since I used an PB with no sugar in it, the cookies were just right! I did add a 1/2 tsp. of salt, since I only have unsalted butter. I left out the cream of tartar.

Honey Oatmeal Bread II

Absolutely delicious! The honey give it a light sweetness, and the soaked oats make it soft and chewy. I substituted 1.5 cups of whole wheat flour for the all-purpose. I also agree with other reviewers that this recipe does use more flour than called for, but do not just dump it in until the dough isn't sticky, knead in small amounts gradually. It did take me awhile to knead the dough until it wasn't sticky anymore, but I tried to add as little extra flour as possible (I just kept re-coating my hands as I kneaded), and the texture of the finished loaves was light and soft. We also ate our first loaf before it had even cooled! Definitely a family favorite!

Ellen's Buffalo Meatloaf

So moist! We love the addition of the canned tomatoes, but do take the time to chop them smaller- some of the pieces were quite large! I used whole grain crackers in place of the bread, and added some flax and wheat germ.
