Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Excellent recipe! I used the Coconut Cream Cheese frosting recipe from this site. I put the cake batter in the baking cups first, and then piped in the brownie filling as many others did. This worked well. (As an experiment I used a teaspoon to drop brownie filling into two of the cupcakes, and this also worked just as well.) This a fabulous recipe that I can't wait to share with my co-workers tomorrow.

Ruth's Grandma's Pie Crust

This was my first effort at pie crust, and it was tasty; however, when I rolled it out, it kept breaking apart. It was very frustrating and I ended up piecing it together when pressing it into the pie plate. I'm not sure what I did wrong.

Chicken Lo Mein

This was amazing! My husband was late coming home, so the chicken ended up marinating for a couple of hours in the fridge. The meat turned out so tender. Even my vegetable-hating husband thought it was awesome. I used the attachment on my mixer to make my own own homemade noodles and boiled them for 10 minutes. Fabulous!

Roasted Chickpeas

I followed another cook's suggestion and dry roasted the chickpeas at 300 degrees for an hour, shaking them every 10 minutes or so. I then drizzled them with olive oil and added sea salt and garlic powder. I turned up the heat to 400 degrees for 30 minutes, shaking them every 10 minutes. They were super crunchy. My co-workers couldn't get enough! I'll definitely try them with cayenne pepper next time.

Creamy Cajun Shrimp Pasta

We loved this recipe and will definitely make it again. Like many others, I only used 1 tablespoon of Cajun seasoning and it was plenty. (My husband likes his food extra spicy, and he agreed that 2 tablespoons would have been too much.) I made the same modifications as another reader because I had frozen cooked shrimp on hand: I mixed the dry ingredients ahead of time. Then I melted the butter, added the dry ingredients, cooked the mixture for 5 minutes, and added minced garlic from the fridge. After a minute, I slowly added the milk, brought the sauce to a boil, and added the defrosted shrimp, cooking until heated through. I added the lemon juice at the end.

Meatball Lasagna

Yum! Even my husband, who doesn't like "tomato chunks," gobbled this up. The meatballs added tons of extra flavor; I will never go back to plain old hamburger again. To save time, I used 30 small pre-packaged meatballs, defrosted them in the microwave, and mashed them with a potato masher. No-boil noodles were also a huge time saver. For the tomato sauce, I added mushrooms and red pepper flakes and used Italian flavored diced tomatoes. I only had enough of the ricotta cheese and egg mixture for one layer of it, so next time I will double it in order to have two layers. It worked well to make two 8x8 pans instead of one large one.

King Ranch Chicken Casserole III
