Best Brownies

Doubled the recipe and it turned out great. Definitely not cake-like, which I prefer. Didn't make the frosting and the pan still disappeared. A good base recipe for adding in fudge, nuts, etc.

Pineapple Pork Chop Suey

Very good! Used some leftover porkchops from the grill. Also used fresh, chopped pineapple, so I substituted OJ for the reserved liquid.

Marinated Spicy Pork Chops

Very good marinade! Instead of 3/4 cup of soy sauce, my husband used 1/2 cup and then added 1/4 cup of Worcestershire sauce. He also added 2 T. of cayenne pepper for a kick.

Burrito Pie

Pretty darn good! Even with some modifications I had to make due to my pantry. Only had 1 lb of ground beef, and no taco sauce (I used a few dashes of cayenne pepper). I used a 8" pie plate, and not all of the meat mix fit. Yum!

Chocolate Chip Banana Muffins

Turned out awesome, even tho I made a few mistakes! First, I only had 1/4 cup of oil on hand, so I added 1/4 cup of applesauce. Also, I didn't have plain yogurt, but substituted vanilla. I also just dumped everything together and mixed. Delicious!

Zucchini Egg Bake

This was really good and easy! I did 2/3 the recipe, and sauteed a 1/2 lb of sausage with the zucchini, onion and garlic. I also omitted the salt and butter because of the sausage. I put it all in a 8x8 square dish and it was perfect after 25 minutes!

Sparkling Punch

Delicious! I served this at a ladies tea yesterday and my friends thought it was quite tasty. I made it with pink lemonade and floated lime slices which was a nice color addition to our tea sandwiches. I've already been asked to bring this to a baby shower!

Pretty darn good. Followed the recipe exactly as written, adding some carrots to the baking dish. Next time, I'll put foil over it and add a pinch of sugar to balance the seasonings.

Refried Bean Enchiladas

These were just okay. Kind of runny and one-dimensional for our pallets, as written. Would be easily remedied with some additional ingredients (meat, veggies, etc). The "sauce" was great and did its job.

My Own Mickmack

This recipe is easy, the flavors are right on, and has the potential to be delicious. I learned 4 things: (1) do check your diced tomatoes to be sure they aren't canned in balsamic vinegar - ew (2) large pasta, like penne, sticks out of the "sauce" and hardens (3) this would fit in a 9x9 and keep everything moist and (4) everything is already cooked, so the 1 hour cooking time dried it out. Next time I'll use smaller pasta, put it in a 9x9, and only cook for 30 minutes, topping it with cheese in the last few minutes.

Really great! I tripled the recipe to have some on hand. If I had more chili powder, I would have made even more. A staple in my kitchen. 2T works for a pound of meat in our house.

Spicy Bean Salsa

This is fan-freaking-tastic! I did make a lot of substitutions based on my pantry, but I think the basic essence was maintained. Used pinto beans instead of black-eyed-peas, green chiles instead of jalapenos, Newman's Tuscan Italian dressing, SteamFresh frozen corn (microwaved first, duh), didn't have green pepper, and voila! A healthy treat which will be served on top of Zesty Chicken Meatloaf (check it out).

Broccoli and Garlic Penne Pasta

This recipe was decent. I threw frozen broccoli in and it worked fine. I did use 1.5 cups of broth, added some poultry rub, and then 2 T. of cornstarch near the end, which gave it the perfect consistency. I also used Pampered Chef All-Natural Seasoning instead of the recommended seasonings. It was a bit salty which was probably my fault. Next time I'll add a little sugar or agave.

Scalloped Potatoes and Onions

Only had small organic potatoes on hand, so I used 9 of them instead of 5. Otherwise, I followed the recipe to the letter. It had a great texture and was super-easy, but I wanted a more robust flavor. Next time I'll kick up the spices a notch.

Roquefort Pear Salad

My mom makes something like this, and this recipe seemed very close. I took it to a military social function and everyone raved, and also thought I was some sort of foodie. I used Annie's Organic Yellow Mustard and it was a bit overpowering (to me). I think next time I'll halve it.

Chicken Pot Pie IX

So delicious! I didn't have peas, but put in 2 small potatoes. I didn't double the sauce, as others had recommended, and the dish was plenty moist and not runny at all. Even better the next day.

Chocolate Ganache

It really is THAT easy. Even more so when done in a KitchenAid. Poured it over some chilled pre-cut rice krispy treats (on waxed paper) to make a special treat for my students. Divine. Be careful, the ganache "sweats" when left at room temperature and permanently changes the appearance of whatever it is atop.

Tex-Mex Pork

Delicious with chicken I had on hand. I just cut the chicken breasts into large chunks and threw them in raw. Probably even better with pork! The type of BBQ sauce really impacts the flavor. I used Annie's Organic Maple and it was wonderful. My husband and I discovered we liked it better over a bowl of brown rice.

Slow-Cooked White Chili

A bit watery and bland for us as written. Used an immersion blender to get some thickness and a dollop of sour cream for good measure. Also ramped up the spice-factor with extra cumin, chili powder and whatever other seasonings may have bee in my site. This brought it up to a 5.
