I love to cook with cheese, eggs and veggies! Not a big fan of cooking meat but I do enjoy making marinated shrimp on the barbeque. I always try to bring something different to my family get-togethers. I have great success with my layered salad... it was a huge hit! One of my first attempts to make eggplant parm., I did not let the coated eggplant set long enough after breading and I did not have my olive oil hot enough before the browning. So... I ended up with greasy eggplant pieces that lost their breading!
