My favorite things to cook
I love to cook with cheese, eggs and veggies! Not a big fan of cooking meat but I do enjoy making marinated shrimp on the barbeque.
My cooking triumphs
I always try to bring something different to my family get-togethers. I have great success with my layered salad... it was a huge hit!
My cooking tragedies
One of my first attempts to make eggplant parm., I did not let the coated eggplant set long enough after breading and I did not have my olive oil hot enough before the browning. So... I ended up with greasy eggplant pieces that lost their breading!

Pita Pizza
Be CAREFUL! I have a charcoal grill and I guess I had too many coals... these babies got scorched on the bottom in no time flat. Other than that, they're great :) I'm going to make them again with less charcoal this time!

Herbed Cornish Hens
Delicious! Moist, golden and a wonderful citrus flavor. I also added rosemary. Will make again!

Slow Cooker Chicken Taco Soup
SUPER GOOD! I am a big fan of brews with hearty flavors so I opted to use Bass Ale in thie recipe. It was perfect as it lended a wonderfully complimentary "beer flavor" without being overbearing. What a great, easy and affordable dish!
