Connie's Zucchini 'Crab' Cakes

This is one of our favorites. I use about a tablespoon of Cajun seasoning (instead of Old Bay) to spice them up and serve them with sour cream and salsa. They are delicious!

Byrdhouse Marinated Tomatoes and Mushrooms

I just made this and it was delicious. I didn't have Balsamic so I used white wine vinegar, probably would be delicious with red wine vinegar as well. Thanks!

Addictive Sweet Potato Burritos

These are soooo good. I don't recommend removing from heat before adding spices though, it will be really watery. Add your spices and let it all simmer until you have a nice thick mixture. Also, don't worry about mashing the sweet potatoes, just microwave them and cut them into cubes - I also sprinkle them with a little cinnamon.

Hungarian Lecso II

This is so good. Very flavorful and hearty and even better the next day. Make sure to choose a really flavorful rye, I like one with lots of caraway to go with this recipe.
