Best Ever Muffins

Wonderful base recipe! I'm in the process of moving and had some leftover baking supplies around so I threw the following substitutions in: 1/4 cup honey, 1/4 cup white sugar, and 1/4 cup brown sugar. 1 1/2 cups white flour and 1/2 cup whole wheat flour. 1/2 cup chocolate chips, 1/2 cup dried cherries, substituted 4oz applesauce for the oil (they are a mite bit dry, so next time maybe oil will work better), and added a mashed banana in. YUM.

Couscous, Cranberry, and Feta Salad

Extremely easy, healthy dish. I've made it a few times in the last few weeks and eaten it cold for days after making. It's simple and good. Not AWESOME, but definitely worth a try.

Curried Squash, Garbanzo Bean, and Potato Stew

Thoroughly enjoyable, and extremely easy. I ate it over whole wheat couscous with a few raisins sprinkled on top. I'm curious to see what some coriander and cumin might do to the recipe for next time--it really is JUST curry. But it's a great start!

Morning Glory Muffins I

I like these a lot. They're very tasty. I modified a few things: used half white and half whole-wheat flour; used half white and half brown sugar, and used slightly more of the apple and carrot than the recipe called for. Really good!

Whole Wheat Blueberry Pancakes

Very good. Apparently I'm not cut out for pancakes, but these are easy and tasty, even if I burn them a bit. I think next time around I'll add a bit more milk to make them fluffier.

Coconut Curry Tofu

Fantastic! The flavors were as good as anything you find in a restaurant. I bought pre-cubed Extra Firm Nasoya tofu, drained it in the fridge overnight in paper towels and a strainer over a bowl. This made the tofu firmer and gave it a nice texture. I also substituted spinach for bok choy and it was fabulous. Will definitely make again!

Vegetarian Bean Curry

I did enjoy this a lot! It was so easy, and didn't require the exotic spices that are so pricey from the organic grocery. I only gave it 4 stars because I think it could have been more flavorful, but I'm not sure what would have made it that way. Also, it burned the bottom of the pan pretty badly (maybe I used the wrong pan).

Spinach and Feta Pita Bake

Pretty simple, fast, and delicious. Because I couldn't find pita bread at the grocery store that day I used little wheat "sandwich thins" instead, which turned out to have an amazing texture and soak in the pesto very well. Thanks for sharing!

Kalamata Olive Tapenade

Very strong flavors, but definitely delicious. Mix with cream cheese for a lighter flavor. I made this for a family Christmas gathering, and it was gone before I even arrived there!

Loved the flavors! I chopped all the veggies together and did not drain off excess fluid, so the finished product was a little wetter than I had hoped, but overall, a very good dish!

It felt bland to me, but I also forgot the mushrooms, so that could have attributed. It was quite good when eaten in a tortilla with some medium-hot salsa and white rice, however.

Hearty Vegetable Soup

I liked this very much. It IS more like a stew than a soup, but I don't mind chunky veggies. Since I live alone, I rely on dishes that refrigerate or freeze well--and this soup is still going strong in the fridge after two weeks!!

Tofu Peanut Stir-Fry

Before this recipe, I hadn't discovered a way to make tofu's texture and taste appealing--and this created an incredible stir fry that even kept well over a few days in the fridge. Very good!!
