Best Ever Muffins
Wonderful base recipe! I'm in the process of moving and had some leftover baking supplies around so I threw the following substitutions in: 1/4 cup honey, 1/4 cup white sugar, and 1/4 cup brown sugar. 1 1/2 cups white flour and 1/2 cup whole wheat flour. 1/2 cup chocolate chips, 1/2 cup dried cherries, substituted 4oz applesauce for the oil (they are a mite bit dry, so next time maybe oil will work better), and added a mashed banana in. YUM.

Couscous, Cranberry, and Feta Salad
Extremely easy, healthy dish. I've made it a few times in the last few weeks and eaten it cold for days after making. It's simple and good. Not AWESOME, but definitely worth a try.

Curried Squash, Garbanzo Bean, and Potato Stew
Thoroughly enjoyable, and extremely easy. I ate it over whole wheat couscous with a few raisins sprinkled on top. I'm curious to see what some coriander and cumin might do to the recipe for next time--it really is JUST curry. But it's a great start!
