Easy Chicken Enchiladas

Very good! I added rotel tomatoes and cooked it with my chicken til it shredded, then put a row of the chicken mix,and a row of the cheese mix side by side and rolled them up. Everything else the same. Hubby said they were the best he has had in a loooonnng time!

Belles Hamburger Buns

My current favorite! Made this with a 2 lb breadmaker on the dough cycle....this is alot of flour, so do not use a smaller breadmaker. I did add 1 tspof vital wheat gluten per cup of flour(5 tspplus the flour)to finish up the last 1/2 cup of flour. I microwaved the first ingredients to 110 degrees, its just easier. Other than that, I did not change a thing. You have to try this!

Crab Legs with Garlic Butter Sauce

We had these on Christmas Eve! Easy and just made the house smell wonderful! Thank-you for the recipe...will definitely make these again! I did add Old Bay seasoning...for us it's not crab without it!

Best Big, Fat, Chewy Chocolate Chip Cookie

Absolutely the best! Easy, too. Made exactly as the recipe stated, but only used 1/2 the choc chips(only 1 cup),the cookie is so good and I don't like so many choc chips! I know 1/4 cup to make each cookie seems like a lot but that is what makes them look store-bought! Will make again and again!

Fisherman's Quick Fish

UPDATE! Used whiting this time, a stronger fish and had to sub Mozzarella and Mexican Parm, exellant crust on top!Mixed the cheese and chips in a ziploc, added parsley for prettiness!PREVIOUSLY: SSoooooo easy! I used Tilapia, and used mostly sharp cheddar but added a couple of tablespoons of blue cheese and pepper jack trying to use up some bits and pieces of leftover cheeses. I piled the topping on (i mayt have made extra topping since I just eyeballed it. Good way to use up the bottom of the chip bag! The timing and temperature were perfect....the only tip I would add is: Spray or grease the pan really, really well! The cheese that melted off the edges of the fish wanted to stick and you don't want to fight with it to get it off the pan...use foil lining,too.

Fried Onion Rings

Boy these are good! Cheap snack... Only thing I did different is that I cut onions (1/2 in.cut thick, they shrink), soaked in coldwater while I was doing everything else. Dusted in flour or bisquik, in a ziplock...then into the batter! Batter should foam abit before you use, beer and flour combo makes bubbles! Absolutely picture perfect onion rings! I would have taken a pic but...I ate them! Freezing about a dozen to see if they will work frozen....

Sausage Stuffed Jalapenos

Exellent flavor! I tried 3 different cheeses, blue cheese in some, cheddar in some and asaigo in most, and then wrapped in half slice of bacon. Make sure you put on a boiler pan so grease can drain. Also, if at 20 min. the bacon is not done enough for your taste, do not just let it bake longer...the cheeses will run out! Instead, broil for the last 5 minutes to crisp up the bacon.WEAR GLOVES & melon baller does an easy job of taken the seeds and veins out. As you are de-seeding them, put the clean ones in a bowel of cold water in the sink. Run clear cold water thru them or rinse and change water. Soak them while you are preparing other ingredients.Take gloves off and discard as soon as you are finished handling the peppers or you could get the hot pepper juice on your cabinet pulls, frig door, pot handle,etc! After assembly, place the whole pan of peppers in the freezer for 15-20 minutes to get the cheeses really cold so they don't ooze out!

Slow Cooker Chicken and Dumplings

I put the chicken breasts in crockpot frozen, turn on high until it was up to temperature then set temperature to low for 4 hours. I flatten the buttermilkd bicuits and cut into small strips, did not stir but did ladle some of the hot broth on top. At the last minute, I removed the crock from heating unit and place under broiler set at 425 degrees for 10 minutes to brown dumplings. This is a very easy, no fuss dish! Hubby said it was pretty good, definitely better than canned (gee,thanks,Hon!) I would make it again but next time I would cook dumplings longer, I only cooked them about 45 minutes on high in crockpot, they were still a little doughy on the side that wasn't browned, my fault though.

Savory Grilled Potatoes

Very easy, made with ingredients in anyone's pantry! Hubby loved them! Made exactly as recipe stated, very tasty with a slight smoky flavor.One packet came out crispy, the other one didn't, but either way, tasted great! I used heavy duty foil and made sure seams were folded over several times and the packet puffs up like the old stovetop jiffy pop! Warning! Be careful when opening, hot steam comes rushing out! Also, if you do have a leak, hot butter can burn you, when moving it off grill. This was a fun idea, especially great for a campfire and easily done ahead of time. Tip: Scrub potatoes with a new scotch-brite type scrubby and even that job takes just seconds and potatoes come out much cleaner!

Salsa Chicken Burrito Filling

Easy to make and hubby loved it! I used Mexican style diced tomatoes with green chiles instead of tomato sauce (whirled it in food processor first) but other than that I followed the recipe exactly. Great garlic spicy flavor!

Simply Lasagna

This was super easy and pretty quick to assemble!Tasted great and after letting it set for awhile before serving, stays stacked and pretty. I made 2 8X8 casserole dishes of this, baked one immediately, then froze the other.For the freezer: let sauce be last layer,lay plastic wrap directly on sauce to make sure no air can get to it.If you freeze in glass dish, bring to room temperature before you bake or start it at 250 for 1/2 hour, then raise temp to 350 for 40 min or so.Put last layer of cheese on in the last 15 minutes. This is great to keep in freezer for the days you just don't feel like cooking!

Hamburger Potato Casserole

Hubby says this one is a keeper! I used cream of celery, 1 can mushrooms, small can of green chilies, garlic salt, parsley flakes, and added grated monterey jack to the sauce. I covered it but I think it you would just end up with sauce as last layer, it would dry out a little more. I put cheddar cheese on last 15 minutes, let it rest for 15 minutes out of the oven to set up. Easy and adapts well to what I had on hand!

Bacon for the Family or a Crowd

I have been doing this for years as I learned it in a restaurant I worked at. I line my baking sheet with foil. I didn't see any one mention this tip: Lay a sheet of foil over the top loosely to prevent spattering all over your oven! Remove top foil about 5 minutes before its finished baking for final crisping(I pour off the excess grease at this point,too.)

Delicious Ham and Potato Soup

Very good! I added finely chopped carrots(2) for color and added flavor. As usual I started with too small of a pot and had to go to the dutch oven! I have yet to make a soup that I haven't changed pots! This was great even though my hubby was a couple of hours late coming home from a business trip. I just turned off the heat and left the pot on the warm burner with the top on. He loved it! Great with this 20 degree weather!Thanks for the recipe!

Banana Crumb Muffins
