At 30-something I'm a recently born again cook from Barbados. I used to cook quite confidently in my late teens, but a few mishaps discouraged me and I stopped.
A combination of things (no small part thanks to the combination of anecdotal advice, scientific information and practical tips from Alton Brown and Good Eats) led me back to getting my toes wet cooking again and I've been enjoying it immensely. Allrecipes.com has also played a huge part in getting confident in the kitchen again, with multiple recipes for anything I can think of, and good advice on modifying them.
Since then I've cooked every meal, making my wife very happy. Her only kitchen duties these days are occasional sous cheffing.
My favorite things to cook
I love a good potato recipe.
I love new ways to cook chicken.
I love things in a nice sauce.
I love to add crushed red peppers to pretty much everything.
I love things with cheese.
I love a good curry.
I love to bake, unfortunately for my waist.
My favorite family cooking traditions
My family in general cooked classic caribbean food with a Trinidadian emphasis. Bakes, curries, stews, pilau, baked chicken, split pea soup and more.
My mom also did lots of broiled food and made a great macaroni pie.
My cooking triumphs
Almost everything I've made from allrecipes has come out fantastic, in particular the Banana Banana Bread and Buffalo Wings have had rave reviews.
It has been a fantastic eye opener and liberating to realise when I want something, almost anything at all, I can look up a recipe research it a bit and make something new and interesting myself. This has ended up with things like 2 am pancakes and it's been great fun. It's also saved a ton on eating out!
My cooking tragedies
Nothing really horrendous so far. A tuna casserole didn't come out super awesome once, but it was still ok. I had the habit of overcooking fried foods (especially chicken) cuz I was more afraid of undercooking than overcooking, but a food thermometer has made a huge difference there. All in all, even the slight mess ups have been worthwhile as learning experiences and I always improve on them the next time I make it.
