Double Chocolate Pie
I thought this pie was a little more work to make than it sounded, but it is worth it! The key to getting it to set up right is to use whole milk and one egg white in addition to the 4 egg yolks. I also let it boil for a few minutes longer than the recipe called for. Do not attempt to cut the pie for at least 24 hours. I left mine in the fridge with the saran wrap on it for 24 hours, and when I cut it, it was perfect. Use a really sharp knife too, that will help. I also used the Ghirardelli 60% chocolate chips, because I love really dark chocolate, and it was terrific! I will definitely be making this again.

Unbeatable Pecan Pie
I will have to make this every holiday now! The maple syrup was a very nice touch. I think I might try it with half maple syrup and half corn syrup next time, as I thought it had a strange taste that was a little eggy. Other than that, the pie set up perfectly, wasn't runny at all.

Special Salmon Steaks
This was a super simple recipe. I actually didn't have the same herbs on hand, so after I brushed them with butter and lemon, I seasoned them with pepper, sea salt, onion powder, and dill, and they came out terrific! I also found that if you don't like them cooked medium (which we do) then you would want to cook it longer that 15 minutes. I will definitely make this again!
