Downeast Maine Pumpkin Bread
This was really really YUMMY! I read a bunch of the other reviews and used some of their tips. 1) instead of 3 cups of white sugar, I used 2 cups white, 1 cup brown. 2) I used my own pumpkin puree 3) I only used 1/2 a cup of oil, and I subbed in a 1/2 of a cup of applesauce. 4) I added a tsp of pumpkin pie spice 5) I also added 1 1/2 tsp of vanilla. I got 2 9x5 loaves and two mini loaves. I toasted up some walnuts and put those on top of the batter before baking. The mini loaves were done in 30 minutes, the larger loaves done at 50. When they were done baking, I poked holes in the top of the bread, while it was still hot and spooned a hot syrup mixture of butter, brown sugar and cinnamon on the top. I also made a cream cheese frosting that I found here on all-recipes. It was AMAZING! I gave the two mini-loaves as a gift, and they loved it. I will be making this again!
