Spicy Roasted Red Pepper and Feta Hummus
This is the best hummus ever---actually I have never liked traditional hummus before. This version is very healthy with no olive oil. Just wanted to comment that I often use a fresh roasted red pepper instead of those in a jar. I first grill the red pepper and blacken the skin (you can also do that under the broiler) then peel off all the blackened skin and throw the pepper in the food processor with the rest of the ingredients. I have also made it without jarred OR fresh red pepper and it was still great!

Healthy Banana Cookies
These are healthy "soft-granola-ish" tasting cookies. Definitely add nuts to them!

Whit's Chicken Enchiladas
These were very good. Do add some flavorings to the chicken and we like some green salsa or green tabasco mixed in with the white sauce for a bit more tang.
