About this Cook
I am a single mother and a Registered Dietitian.
My favorite things to cook
I like to try just about anything! I love to mix up recipes to make them my own and to improve the nutrition of the recipes!
My favorite family cooking traditions
My grandma (the one who did most of the cooking) is very Polish. She made wonderful beet soup, potato pancakes, etc. My mom's specialties are beef stroganoff (we always asked for it on bdays), currant scones, stollen, and chicken soup.
My cooking triumphs
I love to make anything that folks will eat. Having only myself and my son, cooking isn't too fun until I invite neighbors, friends, and family over! I love to cook/bake for the holidays more than anything.
My cooking tragedies
When I was in high school, I wanted to make chocolate chip cookies. When I pulled the first batch out of the oven, I was horrified because they turned into one large, flat mess. I realized that I forgot to add a good bit of the flour (I think I used 1/2 c instead of 1 1/2 c). My dad and brother made so much fun of me...my brother came in the house with a chisel. I was so upset.

Beer Butt Rosemary Chicken
This was so completely delicious!! I had to cook it for 2 hours and 15 minutes to get to 180, but man oh man...worth every minute!!

BBQ NY Strip
Now, this was yummy! We all (my 11 yr old son, neighbor, and myself) gobbled it up with roasted potatoes and asparagus! I didn't do it on the grill b/c it was rainy and windy and cold, but I broiled it on high-10 minutes on the first side and about 6 minutes on the second. PERFECT!

Roasted New Potatoes
These were great, except VERY SALTY. I would cut out the salt totally. Also, I cooked them at 450 for only 10 minutes or so b/c the garlic was starting to get too brown, so I dropped it to 400 for the last 35 minutes.
