Easy Lasagna I
I was going to make rollatini's, but seemed too much work, and I had everything for lasagna, so found this recipe. Its great basics, and easy to tweak it however you want. I used 1.5 lb grnd beef, onions, minced garlic, small can mushrooms, all added to 2-24oz jars spaghetti sauce, one regular, one Grandessa Italian sausage & peppers.had plenty thick meaty sauce. I skipped the cottage cheese, I had large ricotta, and put in processor with frozen chopped spinach(thawed and squeezed dry), put it in fridge while sauce simmered for 20 mins. I used regular noodles- let them set in very hot tap water first. I was short on Mozzerella, so just used it on top w/ fresh chopped parsley. so not too much different than recipe, but did double the meat sauce. wonderful and looked great too. I do think better to use ricotta or cottage cheese, but not both. :)

Slow Cooker Beef Stew I
this is a good basic stew recipe. I add stew seasoning packet, and use baby carrots instead, 1 clove of garlic. the rest is season to taste as everyones taste differs. great with crusty loaf of fresh bread.

Easy Biscuits
Thank goodness cuz cupboard was bare! I havnt used anything but bisquick for years, but had a craving, didnt have shortening or self rising flour. added baking powder (Tbsp), ( no b soda either), and used 1/2 stick unsalted butter, and rest in veg. spread. cut in the butter/spread, then added milk slowly. patted out, doubled, and cut out with juice glass- made perfect size. brushed tops w/spread. baked 18 minutes. I think they would have been better with Crisco. even with added baking powder, they didnt rise much. tasted okay, but even with the butter, not much flavor. good w/butter and jelly though, and satisfied my biscuit craving for now. I think butter Crisco and maybe add shredded cheese , as drop biscuits, they would be close to red lobsters cheddar biscuits. thanks for the easy basic recipe!
