Tasty Tuna Burgers

Reviewed: Dec. 4, 2009
These are a wonderful alternative to regular old tuna! I didn't have on hand lots of the ingredients, but the burgers still tasted great. Putting them in the fridge for 30 minutes was a perfect idea; they really were easy to handle! I plan to make these often. I actually used them in a salad-- I cut the burgers up in pieces and tossed them in with the lettuce. It was very good!

Honey-Garlic Glazed Meatballs

Reviewed: Nov. 16, 2009
We loved these. I actually made a mistake- I only used 1 lb of ground beef and didn't cut in half the other ingredients. It didn't matter- the meatballs were delicious and there were plenty for the 2 of us. (we had leftovers the next night) I also made a lot less of the sauce because I didn't want to smother the meatballs in it; I just wanted to have it for dipping or lightly flavoring things. The small amount I made worked out wonderfully. We ate the meatballs on top of pasta. Can't wait to make again!

Beef Fried Rice

Reviewed: Nov. 9, 2009
Great simple recipe, I definitely plan to make this many times. The reason I gave it only 4 stars is because the recipe does *not* stress that it's VERY important to use room-temperature rice, NOT hot, just-cooked rice. If you use hot rice, the dish will be very mushy. The first time I made this, I followed the recipe as it was written and was disappointed in the mushiness. But I gave it another try, and made the rice the night before, and then heated it just to room temperature before making this recipe. It came out much better and was delicious.

Slider-Style Mini Burgers

Reviewed: Oct. 20, 2009
Loved these! They tasted a lot like Krystal burgers, which have always been a guilty pleasure for me. I used 1 lb ground turkey with 12 Hawaiian rolls, and there was too much meat mixture to fit in the rolls, so I'd rec having extras. Everything else was great!

Pasta and Herbs

Reviewed: Sep. 15, 2009
I was always looking for a simple way to dress up pasta when serving it as a side dish, and this was great! I used a whole box (pound) of pasta, 8 cloves of garlic, and kept the herbs at about a tablespoon, like the recipe said. I used the herbs recommended and also made some subsitutions. I didn't have any black olives, but I'm sure they'd be delicious mixed in. Very tasty!

Honey Baked Chicken II

Delcious, unique flavor! I used thin sliced chicken breasts and cut the recipe down to better fit my smaller amount of chicken. This was great!

Inside Out Ravioli II

Reviewed: Sep. 3, 2009
Yum!! This really surprised me, it was soooo tasty. I used ground turkey and just 1 and 1/2 cans sauce. I don't see why you need 2. (I could probably have gotten away with 1) I used cheddar cheese but also some parm/mozz cheese mixed in. Also sprinkled Italian seasoning on the top. I loved that this recipe utilizes spinach; it adds some interest to the dish. This is a great, very simple, and very kid-friendly recipe. I'm SO excited to eat the leftovers tonight!

Shrimp and Asparagus

Reviewed: Sep. 1, 2009
Delicious! I took the advice of other reviewers. Here's what I did: I bought peel-and-eat shrimp that were already cooked, so I simply peeled them and pulled off the tails. Made the pasta, put it aside. (I used no-yoke egg noodles, they were great!) Next, I sauteed the garlic and cut-up asparagus pieces in some olive oil for about 4 minutes. (omitted mushrooms) Then I added just 1 stick of melted margarine and the lemon juice. Finally, added the shrimp. Since they were already cooked, I only needed to mix them in with everything for about a minute. I then poured everything from the pan onto the egg noodles and tossed well. Then added some Old Bay seasoning. Just now realized that I totally forgot the grated parm!! But the end result was buttery and subtly flavorful. You can always add tons more salt and spices if you need to, but we were happy with the resulting flavor, even with forgetting the parm! Loved it.

Oven Fried Chicken II

Reviewed: Aug. 30, 2009
I took other reviewer's advice and used non-stick spray instead of olive oil. But by doing that, I don't think my chicken was "fried" enough. A lot of the breadcrumbs were "uncooked" and the dish didn't seem entirely like fried chicken. Still, it was plenty tasty and was especially good as leftovers the next day.

English Caraway Cake

Reviewed: Aug. 30, 2009
I had never gotten use out of the caraway seeds in my spice rack, so I searched this site for a recipe that utilized them. I made this super easy cake as an afterthought after cooking dinner one night. It tasted great! I think of it more as a sweet bread, and it's very tasty with butter. I'm glad to have added this to my recipe box!

Superfast Asparagus

Reviewed: Aug. 18, 2009
Love it! I'm a huge fan of asparagus but this was the first time I'd cooked it myself, without it being canned or frozen. It was so super easy-- I will ALWAYS go with fresh asparagus from now on! And I used the "Simple Cajun Seasoning" recipe on this site. I recommend using that rather than buying packaged seasoning. Very glad I discovered this ridiculously easy recipe!

Aimee's Quick Chicken

Reviewed: Jul. 27, 2009
Great recipe! I used a package of chicken thighs and shredded parm instead of grated. I had been afraid that the mustard and teriyaki sauce together would be too salty and overpowering but they weren't-- the flavor was great! I did not have any problems with the sauce sticking to the pan, like some reviews have mentioned. You could use foil to line the pan if you wanted to be extra careful. I served this with rice, and the extra sauce from the chicken flavored the rice nicely. This was really easy and I will definitely make again.

Upside Down Pizza

Reviewed: Jul. 24, 2009
Really tasty, even though I omitted the onions. I also used shredded parm, not grated. I followed the original recipe otherwise and was pleased with the results. Next time I make it, I'll have to let it cook in the oven longer, because the crescent roll dough was a little too doughy--my fault. I also like adding some seasoning and extra cheese on top of the crust. Very easy and kid-friendly meal, I would think.

Quick Chicken with Asparagus and Provolone

Reviewed: Jul. 21, 2009
We really enjoyed this. I loved using the chicken broth because it helped cook the chicken properly and ensured that the breadcrumbs wouldn't burn. I recommend using only 1 egg, and only 1/2 the amount of broth, if you don't want as much. There was definitely a large amount of broth left over, which I drizzled over the chicken. Very good!

Super Easy Seared Ahi Tuna

Reviewed: Jul. 20, 2009
I was attracted to the simplicty of this recipe, although I had never even eaten this dish before, so wasn't sure what to expect! I bought the ahi steaks at Target for $8.99. Once everything was cooked, it was very tasy. The Italian bread crumbs I used gave everything a great flavor. I had some garlic mayo, and I dipped the tuna in that. My husband and I both liked this. I'm giving the recipe 4 stars, not 5, because for me, cooking the tuna for 45 seconds on each side was too long. It'll probably depend on the type of pan you use-- I used a Calphalon non-stick pan, and I turned the stove up all the way because the recipe said to make the pan as hot as you could. However, I really should have only turned it up to medium-high heat or so, because the extreme high heat was too much for my non-stick pan. The breadcrumbs on the first piece of tuna were pretty burned, and there was definitely a ton of smoke from the olive oil. I then turned the heat down and continued from there, cooking the steaks for only about 27-30 seconds on each side. I must also say that I was a little freaked out about the raw aspect! I have NO problem whatsover eating raw fish at a sushi restaurant, but making it myself at home, and being responsible for cooking it correctly made me a little nervous! All in all, this is a great recipe. Just watch the heat level, adjust the searing time as needed, and be prepared for all the smoke!

Barbie's Tuna Salad

Reviewed: Feb. 9, 2009
I was pleased with this tuna salad. I'm always looking for ways to make tuna more flavorful, and I think the parmesan cheese was a big help. I didn't have any dill, so I'm not sure if I would have enjoyed the salad even more with it. Also, I think I should have used a little more mayo. (I didn't use the amount the recipe called for, I just used the amount I wanted) All in all, I will make this recipe again, but I'm still looking for a recipe that has just a bit more kick.
