My cooking tragedies
Wasn't mine, but my youngest son mixed up baking soda and baking powder when trying to make banana bread when I was at work. I got a call with him saying, "FIRE! FIRE! There's a fire in the oven!" I had him turn the oven off and all ended well. My stone bread pans still bear the scars. LOL!

Quick and Easy Green Chile Chicken Enchilada Casserole
This was really good! All I could find was the 10 ounce enchilada sauce, so I used 3 which made it easy to divide it into 3 layers. To save time, I broiled my tortillas, I could do 9 at a time that way and it was done in a flash. I did not have trouble with anything being mushy. Next time, I may use left-over blackened chicken because I like my stuff a little spicier. This recipe is great as printed, though.

Guacamole
YUM! This was great! I did make a few tweaks, I used 4 avocados because what I had was small. I didn't have any limes so I used 2 tablespoons of lemon juice. It turned out fantastic! My family ate it all in one day and I'm making more today.

Tomatillo Salsa Verde
I really liked the taste of this recipe, but it was kind of watery for me. This may be due to the fact I doubled the recipe. I did note it thickens up a bit when it cools. Next time, I will reduce the water to 1/2 to 2/3 to see how it turns out.
