Lentils and Rice with Fried Onions (Mujadarrah)

We had this recipe tonight and really enjoyed it. I'm sure we'll skip the yogurt next time as only 2 out of 4 liked it with the yogurt. This recipe made a very large dish, as a side dish we had enough lentils/rice for at least 10 people, but barely enough onions for 4. I followed the recipe exactly, but I'll make these changes next time: I'll halve the amount of lentils and rice and double the amount of onions. The onions really bring this all together into a very flavorful dish, whether you like the yogurt added or not.

Chicken and Broccoli Alfredo

Loved this dish, who need's the cheese?! My family liked it just as well without the parmesan. I know...its not Alfredo without it, but we aren't big cheese eaters anyway. We are not fans of meals made with soup either, but this one surprised us...it was tasty and very easy. Our favorite is to use left-over rotissiere chicken. Cooking the broccoli in with the noodles is the best idea ever. Fast, easy..great for leftovers too.

Banana Crumb Muffins

Excellent! Excellent! I made alterations as suggested by K.Lynn because I love the spices. I doubled the recipe and yielded 27 cupcake size muffins. These peel right out of the paper liners with no problem, hate it when half a muffin sticks to the paper! This is a keeper recipe!

Salisbury Steak

This was an excellent simple recipe for a dish that I haven't eaten since I was a child. I doubled the gravy recipe as suggested, so we'd have enough to use as gravy for potatoes. The patties were a little large for us (we are small eaters), so I would make the patties smaller. This served us two meals for a family of four!

Roasted Rosemary Cauliflower

Easy and delicious! My young daughter despises cauliflower, but was willing to try it after I told her it would taste like Rosemary Potatoes. She actually liked the cauliflower, so it was a great success. I tossed the ingredients in a plastic bag and used 1/2tsp Garlic Salt instead of regular salt. I also lined the pan with foil for ease of cleanup.

Downeast Maine Pumpkin Bread

We loved this recipe, it was extremely moist, I don't know how others could say it was dry. I did bake mine in mini-loaf pans, even at that a couple of loaves didn't completely set right on the top, they needed a little more baking time. I sent this for a gathering at my husband's work and they were all eaten up!

Lazy Lasagna II

I made this for my family based on a recipe by the National Cattlemans Association, it was basically the same recipe, except it says to add 1 1/2 cups of water to the sauce. This may explain others dry ravioli. I honestly can't comment on the flavor, as I don't eat cheese, so my family's opinion has to suffice. They all loved it, including two friends who were visiting, all had 2nd helpings. I did rinse the ravioli just in case, for moisture and thawing. I substituted minced garlic for the onion. As others mentioned, this is really not a Lasagna, rather a Baked Ravioli, but the family loved it nonetheless. I will make it again.
