Burrito Pie

This recipe was a hit with my boyfriend. I chose not to add the diced tomatoes to the recipe. Next time I may try using a hot taco sauce instead of mild, to give it more flavor and hotness!!

Mini Pineapple Upside-Down Cakes

Reviewed: Apr. 29, 2009
I had a hard time getting these cakes out of the pan. I did use crushed pineapple instead of sliced, that may be part of the problem. Next time I'll try sliced pineapple. The cakes were still super yummy!!

Pumpkin Raisin Scones

Reviewed: Nov. 13, 2008
I made some modifications to the recipe. I mixed all dry ingredients together, cut in 1/2 cup cold butter until coarse crumbs, then mixed in the raisins and nut. In a separate bowl I whisked the eggs and pumpkin puree together, then added to the dry ingredients, just until blended. I divided the dough into 3 equal parts and rolled each into rounds, then cut each into 8 wedges. I brushed each scone with milk then sprinkled the cinn/sugar mixture on top. These were quite yummy!!

Gingerbread Biscotti

Reviewed: Nov. 13, 2008
Super Delicious!! I did make a few changes to the recipes, as others suggested. I substituted 1/2 cup cold butter for the vegetable oil. I first mixed all dry ingredients together, then cut in the cold butter until coarse crumbs. In a separate bowl I mixed the eggs and molasses, I then added it to the dry ingredients. Next I split the dough into 3 equal parts and shaped each into a log, then brushed with an egg wash and baked in a 325 degree oven for approx 22-25 min. (Do not bake in a 375 degree oven or they will burn). I sliced them and baked each side for 5-6 min. Once cool, I dipped each half of the cookie in melted white chocolate. SO YUMMMY!!

Easy Bacon and Cheese Quiche

Reviewed: Oct. 24, 2008
I made a couple changes to this recipe- 1) Instead of bacon bits, I used 6 strips of bacon, crumbled. 2) I used cheddar cheese in place of swiss/parmesan. It was so delicious!! I also made a second quiche- instead of bacon I used brocolli, so yummy also!! Can't wait to make this again!!

Fajita Marinade I

Reviewed: Oct. 24, 2008
I made a couple changes to this recipe- 1) I used 50% lemon juice and 50% lime juice. 2) I eliminated the liquid smoke flavoring. 3) I only used 1/4 cup water. I marinaded my steak overnight in it. Next time I would probably add a little less citrus juice, I found it to be a little much. But overall, the meat had good flavor.

Rich and Simple French Onion Soup

Reviewed: Oct. 24, 2008
I made a couple changes to this recipe- 1) I added more onions (approx 2 additional cups, I didn't think there was enough onions with only 4 cups. I let the soup for at least 2-3 hrs, this gave it enough time to become flavorful. It was very delicious and simple to make!!

Classic Peanut Butter Cookies

Reviewed: Oct. 8, 2008
I made these cookies and followed the recipe exactly without any changes, they came out perfectly!! I liked the use of Crunchy P.B. instead of Creamy. I also tried Joey's PB cookie recipe on here and I think the Classic PB Cookie recipe is slightly better. I will definately keep this recipe to make again.

Burger or Hot Dog Buns

Reviewed: Oct. 8, 2008
These buns made my cheeseburgers so delicious!!! I found this recipe to be very simple. I made a few changes to the recipe, as suggested by other reviewers. 1) I added another tbsp of sugar. 2) I used Bread Flour instead of AP. 3) I let the dough rise 1 hr before divided it into 12 pieces. 4) After dividing the dough and shaping into rolls, I let rise 60-70 min before baking. 5) Brushed melted butter on top while baking, to get a shiny coating. These few changes helped me get a light and fluffy bun. So yummy, will definately make again soon!

G's Flank Steak Marinade

Reviewed: Oct. 1, 2008
I used this marinade on flank steak (which I marinaded for 2 days), it had great flavor. I used fresh ginger root instead of ginger powder because I love the flavor. I'm not a huge fan of flank steak, next time I'll try this recipe on New York steaks.

Fettuccine Alfredo V

This sauce was awesome!! I used regular whipping cream instead of heaving whipping cream and it still came out great. I served it with penne pasta as a side dish with my chicken parmesan dinner, it was a hit!! No comparison to those nasty jar sauces!

Chocolate Cheesecake I

Reviewed: Sep. 5, 2008
Very yummy, extremely simple to make!! I used chocolate graham cracker crumbs. I increased the chocolate chips to 1.5 cups to make it a little more "chocolately". I poured this into cupcake liners and made mini cheesecakes. I garnished them with a dollop of whipped topping and a little chocolate sauce, super yummy!!

Southern Peach Cobbler

Reviewed: Aug. 29, 2008
This is a very good recipe. I used 6 or 7 jumbo peaches and baked it in a 9 x 13 pan. I followed the advice of others and made 1.5x the topping amount. I also increased the cornstarch, I initially used 4 tsp, but after baking the peaches for 10 min, I noticed how "soupy" it still was so I added about 1-2 additional tsp, I stuck it back in the oven for 5 min before putting the topping on. I also increased the butter in the topping to 8 tbsp instead of 6 tbsp. My family absoultely loved this!! I don't know if I loved as much as they did, but I'll definately make it again.

Cheesiest Potato Soup

This recipe was very good. I didn't puree the potatoes, I used a potato masher and slightly smashed some of the potatoes to make the soup thicker, it was so yummy!! I will definately make it again.
