I am a single father trying to raise teenage twins still at home. I have an older son who lives nearby with his four young children. With having all the kids and grandkids around, cooking can be a challenge at times. It is always lots of fun to meet or exceed everyone's expectations.
My favorite things to cook
My family loves Southern cooking. As a native Virginian, there is nothing any better than country ham first thing in the morning. On the other hand, that is not the healthiest meal. I also enjoy baking for my family. My favorite cookie is a white chocolate - cranberry cookie.
My favorite family cooking traditions
We love to cook together as a family. Some of my happiest cooking memories involve the whole family cooking a special meal or baking for Christmas.

Boiled Peanuts
These peanuts are great. After moving from Florida to Ohio, my family had missed out on purchasing boiled peanuts from the roadside stands. Now, whenever I make these, my kids stand by the pot and can't wait to eat them.

Rum Balls III
My oldest had requested Rum Balls for a vacation and I liked this recipe best. I substituted plain butter cookies for the vanilla wafers because he doesn't like vanilla wafers and they tasted great. I had to roll them in confectioner's sugar four times to get them to stop sticking together which made them a little too sweet for some people.

White Chocolate Cake
The cake is heavy but is a real crowd pleaser. The icing is the real winner at our house. I use it with a dark chocolate cake to create Chocolate Lasagna like they once sold at Olive Garden. My kids request it every year for their birthday and now their friends want me to make it for them as well.
