Ham N Cheese Quiches
Great for parties - love the pastry as it is so easy to make. I did make a couple of changes; if you have a kitchen aid, use the beater to make the pastry which is a lot less messy! I then immediately rolled out the pastry, cut out circles using a cutter and lined the mini muffin tins. I put this in the fridge to rest which helped with the shrinkage I experienced the first time. I then chopped up the ham very finely, and added it to each pastry case to ensure each got a share. I topped with cheese (I used a parmesan blend with Asiago and Romano for a more cheesier flavor) then poured the egg/milk mixture over the top. Use half and half or heavy cream for a creamier flavor.
