Breakfast Casserole II

I didn't have any breakfast meat on hand, so went without and omitted the mushrooms. I used 10 eggs and thought this turned out really great. I mixed cheese in also and let the entire mixture sit in the fridge for a few hours prior to baking. I baked this in a stone and left it in for almost 90 minutes. This would have been even better with any breakfast meat in it.

Chocolate Banana Bread

This is now a favorite. I made a loaf for the neighbor who snow-blowed our driveway after a blizzard as a thank you, and now we can hardly stop him from beating us out to clean up after a snowfall.

Peppermint Brittle

I followed advice of others and added a bottom layer of dark chocolate, and sifted out the bigger pieces of candy for the top while mixing in the smaller pieces. I also added a bit of green food color to a small amount of the white chocolate and drizzled it over the top. I think this recipe was well balanced with the dark chocolate, and would have been overly sweet without it.

Barbie Doll Cake

I have a little boy that just turned one. He is fascinated by my husband's red baseball cap, so I made this cake into a cap instead of a barbie cake. I used the Pampered Chef large batter bowl. I mixed up two store bought cake mixes and they fit in the bowl. One problem I almost had was that I mixed the cake in the bowl, but then had to dump it out wash and dry the bowl and then grease it. I also floured the bowl to make sure it didn't stick. I had to bake it for 80 minutes. After it cooled I cut a layer off the bottom to make the brim out of. It was a fairly goofy looking hat, but my son said it was a hat, so that was all that mattered to me. Also it wasn't as red as I had wanted it, but oh well.

Pat's Award Winning Carrot Cake

This was the first carrot cake I ever made. I made this for my son's first birthday party and it got rave reviews. The problem was I forgot to omit the nuts for him, so I made a second cake a few days later so he could have some too. We gave him a different type of cake at his party. The second cake was just as good as the first. I did swap out 1/2 cup of oil for applesauce. The cakes were both really moist and flavorful, nuts, or no nuts.

Mini Meatloaves

These turned out really well. I doubled the recipe, and used half ground turkey, but only mixed up a single batch of glaze. I used only 1 tbls of brown sugar, and felt like I had enough glaze and it was sweet enough. I did some in muffin tins and mini loaf pans at 45 minutes, and they turned out just fine.

Chewy Oatmeal Cookies I

Mmmmmm... These turned out really yummy. They mixed up very nicely. I used cinnamon applesauce and omitted the walnuts and upped both the raisins and chocolate chips 1/4 cup each. I baked them at 360 for 13 minutes on airbake sheets and this seemed just right. My oven seems to run cooler. I did forget to grease the sheets first and didn't realize my error until all sheets were covered w/ dough but still managed to get them off with a thin metal spatula. I will make these many times again.

Butter-Dipped Biscuit Squares

Boy, did I screw these up. Didn't have self rising flour, but used the tip under the recipe to make my own. They were so sticky I had to give up my first attempt to cut them apart, dump them back in the bowl and add more flour. Maybe because I had to stop and feed my baby at this point? Then forget dipping in butter, I just dabbed them with butter on my fingers. Then to top things off I had them in the oven with a roasting chicken at a lower temp and just watched them until they looked brown. They never rose and had tough outsides. Still we ate them and will until they are gone. Anything is better w/ gravy. They taste good once you get a chunk bitten off and I will try them again under more optimal conditions. I was just trying to find a recipe I had the ingredients for in the house. It's not easy to find a biscuit recipe that doesn't call for shortening.
