an additional note: this recipe had the water measurements for high altitude (denver, co) and should be adjusted for other cities

Chicken and Mandarin Oranges

Reviewed: Apr. 11, 2008
interesting taste, i didnt care much for it, but my husband loved it. he's cuban so he enjoys citrus and fruit flavors in food, where im not used to them. the cornstarch made the sauce perfectly thick, the cilantro is a must, it balances out the citrus. might make it again, probably would add some more spice to it for my personal tastes.

Broccoli Cheese Soup

Reviewed: Apr. 9, 2008
i thought it was fantastic, my husband could eat the whole 2lb velveeta block alone so he thought it wasnt cheesy enough. i adjusted the recipe to 8 servings, used 3 cans of broth and used the 2/3 cup of broth instead of water for the cornstarch. i would have liked it if it was thicker, maybe i put too much broth. i used a full bag of frozen brocc plus a fresh bunch of brocc and 1.5 lbs of velveeta. i also had some heavy whipping cream and used that with the milk. all in all very filling and delicious served with sourdough bread!

Cream Of Green Chile Soup

Reviewed: Apr. 7, 2008
i thought this was fantastic, and my husband loved it. only reason why i put 4 stars is because it was missing something. maybe i should have used all hot chiles, i mixed mild and hot. it was less creamy than i thought, but was still good. i ommited the cumin because i dont like it and added a dash of paprika. easy to make and a very satisfying way of not eating meat.

very very tasty and extremely easy to make. i added a bit of breadcrumbs to keep everything together, tossed them in the skillet to brown them a little bit, then baked them. it was grilling weather. all in all very tasty. also added a dash of onion powder and a dash or garlic powder.

Eggplant Parmesan II

Reviewed: Nov. 27, 2007
My husband loved this, but i wasn't completely thrilled. This was my first time making it and one eggplant yields so much! I will make it again but i liked how the other recipe fried it first to make it crispy then baked it. I think I needed to soak it a little longer on the salt, it was slightly bitter
