Chicken Breasts with Balsamic Vinegar and Garlic

I made this recipe more for my wife than myself as she digs the balsamic vinegar/garlic combo and I prefer Mexican-style chicken. It came out pretty good, and although I don't care much for mushrooms I enjoyed it. Needless to say, my wife really liked it. The best part for me, though, was the smell while it was cooking - a really nice rich smell filled the kitchen while the chicken and mushrooms and vinegar cooked together. Will make this again.

Sweet Pepper Rice

Pretty tasty. I doubled the recipe and tossed in some yellow peppers and a dash of allspice. Pretty flavorful, but I think a bit more chicken broth would have helped when doubling the recipe. Definitely in the rotation for side dishes.

Onion Rice

My wife loves red onions so I went searching for a rice recipe with red onions in it. This one fit the bill and it really turned out well. Best thing was, it was so easy to make!

Simple Turkey Chili

Pan-Fried Asparagus

Easy Pancakes

Surprisingly tasty. Just expected this recipe to produce some fluffy pancakes but they were much more than that. Easy recipe to make as well, thus living up to the name.

Spanish Chicken and Rice

Sweet Potato Corn Bread

Very good corn bread. Using the sweet potatoes was a good change of pace. I will make these again but I will use a bit more sugar and a bit more sweet potatoes.

California Chicken Spaghetti

With some guests coming over for dinner, I wanted to make something tasty and different and this was it. Simple to follow, this recipe yielded a very tasty dish. I used diced canned tomatoes instead of the fresh tomatoes to save some time and it worked out well. Will definitely make again and again.
