B and L's Strawberry Smoothie

Reviewed: Jun. 27, 2008
The definitive strawberry smoothie recipe! Loved it from the moment I read the recipe. My daughter, who doesn't care much for strawberries, devoured this. Followed recipe exactly and came out perfectly.

Spicy Garlic Lime Chicken

Reviewed: Jun. 19, 2008
This went over well here. It was very flavorful as the garlic and lime did well to coat the chicken. I used chili pepper instead of cayenne pepper as my wife doesn't like too much heat. Oh yeah, I took someone else's advice and pounded the breasts a little. I think that helped a lot.

Creamy Italian Dressing II

Reviewed: May 8, 2008
Needed some dressing in a pinch and this fit the bill perfectly. I used a bit more of everything: red wine vinegar, garlic, oregano. Also used olive oil and lime juice (out of necessity). This work out spectacularly. Definitely a keeper.

To Die For Blueberry Muffins

Reviewed: Mar. 2, 2008
The name's no joke. Turned out excellent. Made six full-size muffins. The topping made waaaay too much so I'd recommend cutting it by half or a third. It took almost exactly 23 minutes for the batch too bake thoroughly.

Pesto

Reviewed: Mar. 2, 2008
I'm not much into pesto but I made this recipe because my wife loves pesto. It turned out very good. I halved the recipe and was enough for 8 ounces of linguini plus a pair of cooked chicken breasts cut up into cubes. The pesto was smooth and not runny at all. Will probably become a staple for us.

Banana Oatmeal Crumb Cake

Reviewed: Feb. 18, 2008
I was a little unsure about this one but it turned out great. The banana flavor worked well as the foundation for this bread, and the crumb topping worked out fine.

Greek Pasta Salad I

Reviewed: Feb. 18, 2008
I don't like these kinds of salads, but I made it anyway because I was serving it at a party. Well, I'm a fan of this salad now. Everything went very well together, from the oils and the spices to the tomatoes and onions. I used the elbow macaroni and it was good. I also used red onion instead of green onion. Mine unfortunately didn't have a chance to cool down in the fridge so we ate it after about an hour of making it, but it tasted fine. Next time, with several hours to chill and have the flavors come together, it will be extra delicious.

Grilled Chicken Kabobs

Reviewed: Feb. 12, 2008
Most of the other kabob recipes I'd found called for soy sauce, which I didn't have. I had everything for this one, and it came out grand. I used red and green peppers as well as red onions as well as the chicken, and everything was very tasty.

Taco Seasoning I

Reviewed: Feb. 12, 2008
Like others before, I used this in a pinch. I'd just tossed some ground beef on some heat and realized I had no taco seasoning packets. I went for this recipe, which I'd saved to my box before. I had everything on hand and put all the spices together. The meat came out so tasty and gave the tacos a fantastic flavor. Taco seasoning packets for me are now a thing of the past!

Basil Chicken over Angel Hair

Reviewed: Jan. 26, 2008
Because of its simplicity - and lack of marinara sauce - I was surprised at how much flavor this had. But this dish did not last long at my house. I didn't have fresh basil so used the dried stuff and it was still very tasty. I also used one can of diced tomatoes instead of fresh ones. I was worried that it might not be enough and we'd have too much chicken and pasta and not enough tomatoes but that wasn't the case at all. I did add a little bit of sugar as others suggested. Will make this again for sure.

Baked Garlic Parmesan Chicken

This gets five stars for both taste and ease of preparation. In less time than it takes for my oven to preheat I get all the ingredients together and prepare the chicken.

Gingerbread Biscotti

Reviewed: Jan. 14, 2008
Never tried to make biscotti until I saw this recipe and it was easier than I'd anticipated. The taking out and putting back in the oven seemed strange at first but it makes sense - that's how it gets so damned hard! Went perfect with some coffee, hot chocolate... hell, even cold water! Plus, with the melted chocolate I put on top of them, they even looked sort of professional looking!

Hot Spiced Cider

Reviewed: Dec. 26, 2007
This hit the spot on Christmas morning. We wanted something warm, sweet and different (to us anyway) to go with our coffee and settled on this. It seemed a bit strange to put all that stuff in our coffee pot but it worked like a charm. We used most of a two-quart bottle of cider right away and wound up going through twice that. Will be making again for certain.

Raspberry Crumb Cake

Reviewed: Dec. 23, 2007
I made this cake by accident. I asked my wife to get me raspberries from the farmer's market she visited but later on realized that I had actually wanted her to pick up cranberries. Doh! So I searched for a recipe for raspberries and found this. It looked challenging but I tried it anyway and it came out great! A couple of pointers: 1) watch the raspberries on the heat! They burn easily; I burned two cups worth; 2) the way I got the butter and the other dry ingredients was to mix them together with my hands, maybe that's how you are supposed to do it but I don't know; 3) make the raspberries early enough so they have a chance to cool; 4) eat this warm!!

Downeast Maine Pumpkin Bread

Reviewed: Dec. 19, 2007
Amazing taste that gets better with each passing day. Of course, it won't last longer than a few days because it's so good. Sweet, moist and the perfect texture. This recipe ruined the other similar breads from this site because nothing could possibly be as good as this.

Spanish Rice II

Good rice but nothing special. Lots of tomato flavor, perhaps a bit too overpowering. Will make again but might cut back on amount of tomatoes used.

Chicken and Peppers with Balsamic Vinegar

Reviewed: Dec. 16, 2007
Despite what some others have said, this had plenty of flavors for me. I especially loved the way the flavor was brought out of the peppers. Still, I added some allspice to be sure I had enough flavors and it did. Absolutely delicious dinner. Went well with garlic bread and fried asparagus.

Chicken Tortilla Soup V

Pretty good soup. My wife would have liked some olives in it but since I don't like olives we passed but she still enjoyed it. Perfect for the cold winter night we had it on.

Bodacious Broccoli Salad

Reviewed: Dec. 13, 2007
I'm not much of a broccoli fan but this turned out well. My wife's more of the broccoli connoisseur than I did and she enjoyed it. I never handled broccoli before so I was a but new to cutting up the broccoli heads but other than that everything else went smoothly. The dressing turned out pretty good as well. We'll make it again.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Dec. 10, 2007
I made this recipe more for my wife than myself as she digs the balsamic vinegar/garlic combo and I prefer Mexican-style chicken. It came out pretty good, and although I don't care much for mushrooms I enjoyed it. Needless to say, my wife really liked it. The best part for me, though, was the smell while it was cooking - a really nice rich smell filled the kitchen while the chicken and mushrooms and vinegar cooked together. Will make this again.
