Curried Coconut Chicken

Fabulous!!! I omitted the tomato sauce, used 3.5 tbsp of curry powder and 1.5 tbsp of sugar and seasoned generously with salt and pepper. Added some mushrooms, brocolli, and green peppers. Simmered for about an hour uncovered and the consistency and flavour was perfect. Will certainly be making this again soon!

Balsamic Roasted Red Potatoes

I made these as a side for Mother's Day dinner and was absolutely delighted with how they turned out. I followed the recipe to a tee. I was concerned they'd be too vinegary but they were perfect. I will make these again for sure...they taste great and are super simple to prepare.

Strawberry Bread

MmmmMmmmm. I just made these tonight with the following changes: used 1 cup applesauce and 1/4 oil as well as 4 cups of diced strawberries. I followed everything else as per the original recipes. I made one loaf and a tray of muffins. Simply delicious...will certainly make these again.

Butter-Dipped Biscuit Squares

So fast and easy! I was skeptical at first because there were so few ingredients but it was fantastic. I am not a bread maker but even I didn't goof this one up! I couldn't seem to make nice looking squares like the picture so I just rolled mine into balls and flattened. I halved the recipe and got 6 decent sized biscuits which I baked in a small casserole dish. After coating with butter, I generously sprinkled the biscuits with garlic powder and an Italian seasoning blend. They turned out beautifully and were very flavorful. Served with Mulligatawny Soup I from this site and a chicken caesar salad...deeelish! I will be making these often, especially to wow my dinner guests=)

Chicken Pot Pie I

Yum...tasted great and came together quickly! I sauteed the chicken in olive oil with onion and garlic. I seasoned with salt and pepper and italian seasonings. I used frozen mixed veggies, 1 can of cream of chicken and half a can of milk. Poured it all into a pie crust and baked until golden. Will make again. My only problem was scooping it out...it got a little ugly but still tasted fantastic!

Mulligatawny Soup I

Out of this world delish! Quite possibly the best soup I have ever made. Looks and tastes amazing and it was easy to make=) I did have to add more chicken broth as the rice seemed to absorb a lot of it. And I used about 2 tablespoons of curry for a more intense flavour. I sure wish I made a double batch!

Chocolate Banana Oatmeal Porridge

Quick and easy to prepare! I used quick cooking oats and cooked them with water in the microwave for 2.5 mins, then added the mashed banana and brown sugar and cooked for another 2 mins. Loved the sweetness of the banana and brown sugar. Just eyeballed the amt of sugar added. I sprinkled the chocolate chips on top but will probably omit next time...didn't really need them.

Spinach Chicken Parmesan

This recipe was great...fast and easy to prepare, looked awesome and tasted even better! I added extra spices to the parmesan and white sauce...italian seasonings, garlic, soy sauce, salt and pepper...just kept tasting and throwing stuff in until it tasted right. Threw in some mushrooms and used fresh spinach leaves. Used a combo of green and white onions. Added some panko breadcrumbs to the parmesan mixture...liked the crunchiness it added. Will definitely make again!

Pretzel Turtles

These are awesome! I used mini Cadbury Caramilk squares as I couldn't find Rolos. I put the pecans on top before placing in oven so they could roast up a bit. I also made some using Hershey Kisses with an M&M pushed into the tops...cute for Christmas. I drizzled some white chocolate on top just to make them look a little more special. The best part aside from tasting like Heaven on your tongue was that they were soooo quick to make and there was virtually no clean up! LOVE LOVE LOVE this recipe!

St. Louis Toasted Ravioli

These were awesome...easy to prepare and tasted amazing! I used panko breadcrums seasoned with salt and pepper, garlic powder, and and Italian seasoning blend. Crunchy and delicious! Will certainly make again.

Shrimp Dip III

This was delicious! I also used green onion in lieu of white/yellow. Added some salt, pepper and a salsa spice mix as well as a lemon dilly spice mix by Epicure. Served it open faced on whole wheat bread, topped with a little extra cheese and broiled until melted. ***UPDATE*** Made this again for a light dinner tonight. Had half a loaf of a store bought garlic bread so I baked it up, topped it with the shrimp dip, sprinkled with more cheddar cheese, and put it back in the oven to heat through and melt the cheese. It was DIVINE!!! The garlicky flavour infused the shrimp and was heavenly.

Sweeper Steak

Made this tonight in the crockpot and OMG it was fantastic! So easy to put together in the morning and the smell of it slow cooking was out of this world! The meat was fork tender and so flavorful! I added some frozen mixed veggies and broccoli to the pot in the last hour and served over rice...deeeeelish!

This would have been good if I just followed the recipe as written. Instead I halved the sugar as suggested by many...it wasn't nearly sweet enough for me but I think it would have been delicious with the full amount of sugar.

Harvested Chicken Stew

As mentioned before this is more a soup than a stew but it was very good nonetheless. I used only 4 cups of broth and that was plenty, added a bit of sugar, seasoned with garlic powder, salt, pepper and Italian seasonings, and thickened with cornstarch.

Coq au Vin alla Italiana

Made this last night for my mom's birthday dinner and it turned out fantastic. It looked, smelled and tasted delicious. It was easy to prepare and made a lot. I added a 28oz can of tomatoes, substituted zuchini for mushrooms, Italian seasoning for the rosemary and used a pinot noir. I also added a bit of sugar. Will make again=)

Easy Skillet Chicken a la King

This was a breeze to whip up and tasted delicious over country style biscuits. I added salt, pepper, garlic powder and some Italian seasonings to the chicken as it was browning as well as some orange bell pepper, onions, and broccoli florets. I will definitely be making this again!
