Cheater Pot Pie

Reviewed: Dec. 3, 2009
For our family this was just ok, I think the bread texture for us was a bit too much. I used a roasted chicken from the store and added a bit of canned milk with 2 percent milk which added thickness and made the filling richer. I had no problem with it being runny. The filling itself was good with a little tweaking of spices we enjoy. I will try adding this a flaky pie crust.

Stuffed Pork Chops III

Reviewed: Oct. 12, 2009
These were ok, I followed the recipe but I think I may have over stuffed them, the filling fell out making it look ugly and they seemed like they were swimming in broth. They tasted fine though and were moist, I was not able to make a regular gravy like others were since alot of the filling fell out. I put the leftovers stuff from the pan in a blender, blended all together and then back in the pan with a little butter, this was delish served over our chops. I will try this again. I gave 3 stars because I was dissappointed with the filling falling out, not the fault of KAREN....

Spaghetti Squash Saute

Reviewed: Sep. 16, 2009
Spaghetti squash is delicious all by itself with a little salt and pepper. Tonight I decided to really spice it up. I baked it like the recipe said, while baking I sauteed onion, a tsp. fresh garlic and mushrooms in a bit of EVOO and Smart Balance Butter. I then added the spaghetti squash, sprinkling with salt and pepper, putting on a serving platter then finishing off with fresh garden roma tomatoes....It was amazing alot of flavors popping in your mouth. My family has always loved spaghetti squash or any squash for that matter. Enjoy!

Garlicky Summer Squash and Fresh Corn

Reviewed: Aug. 26, 2009
I have been doing squash and corn like this for years. In "spanish" we call it "calabasitas con maize". We love it as we look forward to harvest time for the squash and fresh corn. Works with frozen and canned as well.Do away with the broth its not needed or add very little as the squash and corn cook in their own juices and for a nice kick add a diced jalapeno. I dont add basil or other peppers but I'm willing to give it a try, thanks. Serve it with rice, beans and tortillas. OMG! My mouth is watering...mmmm!

Steak Sauce

Reviewed: May 12, 2009
Hmmm! No not a keeper for us, it reminded us of Heinz 57 which we dont care for. It also had a strong ketchup taste so I tweaked it a bit I added a little liquid smoke and 2 TBS.dark molasses, cutting the honey to 1/4 c. I think I will let it set over night and try it tomorrow. Maybe this will be a rewrite.

Cauliflower Side Dish

Reviewed: May 12, 2009
This was not a good recipe for us. Came out very dry. We added more butter but that made it into a mush. We enjoy our vegies and I thought I would give this a try. Cauliflower is a delicate dish when cooked so you have to be careful with adding ingrediants. So far just plain old butter, salt and pepper work for us. Thanks though.

Chicken Marinade

Reviewed: Apr. 21, 2009
Ok, first, this chicken was unbelievably moist, my husband accused me of under cooking it. I did not do any substitutions but I did add 2 Tbsp. of sherry instead of 1 Tbsp. And I used bone in breast chicken. (OOPs I guess thats a subtitution) I grilled the chicken on our gas grill served it with a big green delicious salad. As for the taste, I honestly found it a bit flavorless on the inside, the outside had a wee bit of asian taste. We ended up pouring BBQ sauce on it after we took it off the grill. If you like a light marinade taste then this is it for you. Thus if I could I would give it 5 stars for being so moist but 3 stars for taste. Maybe this is a good starter for more spices, I will try this again. Thanks

Mom's Baking Powder Biscuits

Reviewed: Apr. 4, 2009
I have been making this recipe for years and it remains our favorite biscuit recipe, I know it by memory. Sometimes I sub the milk with buttermilk, they come out so tender and moist. Also brush the tops with melted butter. Tip: If you dont have buttermilk on hand just add 1 TBS. of white vinegar to regular milk and let sit for about 5 min. you cant taste the vinegar and the biscuits are delicious also if the tops dont brown put under the broiler for a couple of minutes keeping a close eye on them, just enough for a slight brown top.

Asian Ginger Dressing

Reviewed: Mar. 30, 2009
This was pretty good. I did have to tweak it a bit after reading other reviews. I added 1/2 EVOO and 1/2 canola oil and 1 TBS. pure dark sesame oil. I cut the honey to 1-1/2 TBS. and I used reduced sodium soy sauce and only 2 TBS. of water. It makes alot of dressing. Next time I think I will half the recipe.I used it sparingly on an Asian Salad I make.It was tangy and flavorful. Sorry I had to tweak this I hate changing recipes, but this was an great starter. Its all about cooking with your own flair.

Asian-Style Pork Chop Bake

Reviewed: Mar. 30, 2009
Excellent recipe! I did leave out the allspice though, it just didnt sound good to me. I marinated for 2 hours and then I grilled them,I cooked the sauce then I brushed it on while grilling, so yummy and moist. I served with steamed rice and an asian salad that I make.

Sweet and Spicy Sweet Potatoes

Reviewed: Jan. 12, 2009
Oh Wow! Can I say this will be my new favorite way to eat sweet potatoes. My kids who do not care for sweet potatoes with the ususal marshmallows and other wet stuff as my daughter says, really enjoyed this recipe. We didnt have poultry seasoning and it still came out with great flavor, in fact I didnt make enough, they asked for more. Great recipe!!

Twice Baked Potatoes II

Reviewed: Jan. 12, 2009
We enjoyed this recipe, using only 1/2 the sour cream plus it was fat free sour, Smart Balance butter and a smallamount of 1 percent milk, and regular sharp cheddar, we still wanted good flavor. If everything was full fat content I would of given it five stars, but since I'm watching my heart and weight, four stars is it. Thank you! Delishhh...

Fruity Curry Chicken Salad

Reviewed: Sep. 22, 2008
So sorry, this recipe did not work for us . I added everything except the nuts, the curry was overwhelming, I guess we are sensitive to certain spices and my kids did not like the raisins or the apples in it. I will keep searching for that perfect chicken salad recipe. The reviews were great for this one. Maybe I will give it a second try and change it up a bit. Thanks

Fresh Fruit Salad

You just cant beat this for a fresh fruit salad. It was so refreshing after chilling for a while and the taste was magnificent. I used a variety of fruits and berries I found in season at the market, my family gobbled it up.
