I have a husband, 14 chickens and a cat, and we all live happily on two acres in the California High Desert.
My favorite things to cook
I love to cook. Period. Some of favorite ethnic foods to cook are Asian and Italian. I'm also pretty good at low-fat/low-cal cooking. It all hinges on finding that really great recipe. I need to watch my sodium intake, so lately I've been looking for great low-sodium recipes.
My favorite family cooking traditions
Every Thanksgiving and Christmas, the family gets together and we each contribute a homemade dish to the holiday meal. Luckily, everyone in my family is a pretty decent cook!
My cooking triumphs
One Christmas I made a pumpkin bread pudding with caramel sauce for dessert. One of my sisters loved it so much that she actually *stole* the leftovers and took them home with her.......not that I wouldn't have given them to her if she had asked.....but that was the best compliment I've ever received.
My cooking tragedies
One time I was having the family over for dinner and as I was carrying a big pot of food from the stove to the kitchen counter, I accidently tipped the pot and all of the food went SPLAT all over the floor.

Pumpkin Chili
This is great stuff! I'm making it right now for a Halloween-themed potluck contest and it's so good I'm not waiting for the results to post my review. Who would have thought a chili with such an unusual ingredient would come out so good. I was leery of the pumpkin pie spice too but it really blends in well. Of course I did a few things differently. I doubled the amount of pumpkin and chili powder, and I added garlic, cumin and a little cayenne pepper. In my opinion, there's no way sugar could possibly improve this dish (to the contrary!) so I eliminated it entirely. I'll make it exactly the same way next time cuz there definitely will be a next time.

Marinated Rosemary Lemon Chicken
This was absolutely delicious cooked on the grill even without a speck of salt! The only changes I made was to add a couple of cloves of crushed garlic and I used fresh rosemary instead of dried. I have to watch my sodium intake but the two guys who were with me thought they were great without salt and didn't add any even though the salt shaker was right there. Oh yeah, it wasn't really intentional but I ended up marinating the chicken for about 48 hours before I cooked them. Probably a half-day would have been sufficient. I'll definitely be making this recipe again. Thanks!

Heather's Cilantro, Black Bean, and Corn Salsa
How do you figure this makes 72 servings??? As a result, the nutritional information is very inaccurate for those of us who must watch our sodium, fat and/or caloric intake.
