Onion Rice

Good stuff! I too used 1/2 a pkg of onion soup mix... this was yummy! It definitely can stand alone. My family enjoyed it & I would definitely make it again in a pinch.

Creamy Ranch Pork Chops and Rice

Good, but very average. I prefer my food to have a good color, not a brownish muck look. It was a tad salty... but still edible. I would make this again in a pinch, but I also would not serve this to company!

Chicken Florentine Casserole

This is wonderful! For time purposes, I ended up slicing the chicken breasts & I cooked them on the stovetop. I added white wine to the spinach/mushroom mixture before adding the can of soup. I used fat free milk instead of half & half and I only used a small handful of parm! Then I added the chicken to the sauce/veggie mixture & I let it boil for a little while. Well, I believe the wine & fat free milk made my mixture too thin-- so I ended up having waaay too much sauce! Again for time purposes I added cooked rice to the sauce until all the sauce was absorbed. This way I ended up with a one pot dish essentially & I saved a lot of calories by omitting the mozza cheese. I didn't follow the instructions exactly but I did follow the ingredients almost to a tee. The taste is to die for! This is a great recipe & I'll make it again... as instructed next time :)

Sloppy Joes II

I've never been a fan of sloppy joes, but my family begged me to make some after watching a kids camp movie lol. I've only tried the canned version before, which I thought had a bad after taste, so I came here & found this one! Yummy! I used ground lean turkey breasts instead of beef, but kept all other ingredients the same. It's so good I'll consider adding this to the monthly rotation!

Italian Sausage Tortellini Soup

Simply wonderful even without sausage! I didn't add any italian sausage because I don't really like meaty soups. I followed the recipe exactly (well I added a 2 stalks of celery & corn and used stewed italian tomatoes instead)... wowza. I will make this every week! It's that good...

Too Much Chocolate Cake

I cut the oil down to 1/2c and I added extra warm water to get a good consistency. The recipe made 12 cupcakes & 1 round cake pan (w/ bundt piece inserted)... I baked the cupcakes for 16 minutes & they were perfect! Just make sure you do not fill past the 1/2 way mark because this recipe nearly doubles in size once baked. I made the cupcakes in oversized Nut & Party cups (from Wilton) & we ate them warm- it tasted like a molton lava cake w/ the melted chocolate chips! Yummy!! And unlike most cakes, this gets better the day after. It was so moist & it reminded me of a chocolate muffin from Costco! Mmmm this is my new go-to recipe for chocolate cake.

Salsa Biscuit Chicken

My sister-in-law (we're both addicted to allrecipes!) made this for her kids one evening when I was over & I had a bite of the chicken mixture... the inside had an excellent taste, but due to the high calorie content I'm giving it a lower grade. I read some of the other reviews & many people have said they give this to their kids as a "snack". Well in no way is something that is 1200 calories & 63g fat considered a snack- its a future full of diabetes and obesity! I would suggest using the mini-muffin pan idea that came from another reviewer & bring it to a potluck. There is nothing nutritional about this meal.

A Good Easy Garlic Chicken

Instead of using garlic powder & onion powder I used 3 tbsp of minced garlic and I sauteed 1/2 onion slivers on the side. I didn't make a gravy like most of the other reviewers did, I just topped the chicken with the onions. I believe fresh is always better--- BUT the simplicity of this dish makes me give it 5 stars.

Juicy Roasted Chicken

This is foolproof. lol its like "Chicken for Dummies". I usually add whatever I have on hand and stuff it in the cavity: either onions, celery, apples, fresh herbs... you get the idea. It's nearly impossible to mess this one up! :) Instead of just "arranging" the butter around the exterior of the chicken, I mixed some extra onion powder in with the butter and rubbed it under the skin. The skin will already crisp on its own without the additional butter. By rubbing the butter compound on the meat it produced a perfectly moist bird!

English Royalty Chocolate Chip Scones

To me a traditional english scone is a little more flakey than this was. This had a funny texture more like a cake/cookie- I really think the odd texture came from the addition of extra orange juice. The mixture was very dry before adding the extra juice, so perhaps you could add extra butter instead to give it a better texture? It was good enough, but I wouldn't classify it as a scone & I certainly wouldn't serve it to royalty lol. I probably won't make this again

Honey Baked Chicken II

I've wanted to try this recipe for a long time, but when I saw the calorie content for 1 serving (over 1000 calories- are you kidding me!?) I said forget it. Well, I never forgot about this recipe & I thought I'd try it anyway because of the great reviews. I cut the butter down to 1/4 cup & used skinless, bonless chicken breasts.... for all of you who claim your chicken breasts are dry and gross- try this recipe next time you cook the breast. I reduced the cooking time to 45 minutes to ensure that they wouldn't turn out dry. It was so tender & moist! I believe I used a little too much curry though b/c our kitchen smelled like curry for 2 days after I made this lol. This was delicious & a few healthier changes made this dish worth eating.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

The sauce is just wonderful. To those of you who didn't like the sauce, you must have been using inexpensive port. It is usually very sweet because it is not aged. I used a tawny port which made a rich sauce that only enhanced the flavour of the meat. I really think the type of port you use will affect the taste- it really shouldn't take away from the beef (like many of you have suggested). I agree that filet mignon doesn't need this much fuss, so I used ny strip instead. I didn't really make any modifications other than using finely chopped shallots instead of white onion and I used 1/2c of Stilton instead of 3/4c- A little goes a long way!

Anniversary Chicken I

This was just okay. At one point all the cheese & bacon slid off the top of the chicken in the oven because the chicken was so slimey due to all the different dressings. I'll probably go for something a little more fresh tasting next time.

Spanish Rice II

I have been making this recipe for over a year now... and I was shocked that I forgot to review this! I use it so much I don't even look at the recipe anymore :) This is a quick go-to recipe & I make sure to always have cans of diced tomatoes w/ jalepenos on hand. If you don't like a lot of heat, use less chili powder & I always go by the ratio 1.5cups of water to 1 cup of rice. It produces sticky, fluffy rice! Mmm! I use basmati rice with this dish, I prefer the fluffiness that rice has. Also, it soaks up all the flavours beautifully! The best advice I can suggest is to be careful as to what type of tomatoes you pick up... Once I accidentally grabbed diced tomatoes w/ chili flavouring.. ick. Make sure its diced tomatoes w/ some sort of hot pepper- it makes all the difference. Enjoy!

Peanut Butter Noodles

Excellent! My family (even the picky eater) really enjoyed this. The changes I made to make this dish more kid-friendly were: I used whole wheat spaghetti, didn't use the chili paste & used 1/2tbsp of ginger instead of the full amount. Also, right before adding the sauce I added 1tbsp of equal parts cornstarch and water to thicken up the sauce. It thickened instantly and to me seemed perfect. This way the sauce perfectly coated all the ingredients I added to the pot. With that said, to make this a meal I added 2 chicken breasts, baked & sliced. I also added 12oz of medium sliced carrot sticks (about 4 large carrots I believe) to the water when I was cooking the spaghetti. I topped the dish off with green onions as directed. Oh my goodness... what a fantastic meal. This will now become a staple in our monthly meal plan!

Salsa Chicken Rice Casserole

For perfect, nearly sticky rice (my fav!) for every 1 cup of rice add 1.5 cups of water, bring to a boil, cover & simmer for 20 minutes. Perfect every time! Anyway, I took the advice in one of the reviews to add extra salsa... Oops! Big mistake on my part. I went a little salsa crazy & all I could taste was the salsa! I simmered the chicken in the sauce on the stovetop & I mixed the rice & chicken together. I think 2 cups of cheese is waaay too much, so I only used a handful of cheddar and broiled the casserole for 5 minutes before serving. Overall this is a good weeknight recipe.

Sugar Cookie Icing

Love this recipe! However, I had to use 4+ tsp of milk in order to get it smooth. At first after using 2 tsp of milk (having not read others reviews) I was stuck with a huge lump of sugar! It was pretty awful, but once I made the adjustments- it was perfect. While I added extra milk, I didn't add extra corn syrup. This gave my cookies a dull look instead of the brilliant gloss I had hoped for. So definitely add equal parts of milk & corn syrup. Next time I'll try 3tsp of each! Great smooth look, easy to work with... I'm so happy I found this recipe!

Pretzel Turtles

I made about 120 of these pretzel turtles & tossed 6 in a celophane bag & stapled on a holiday label made out of cardstock (check out paper-source.com for a great how to!). It's a great add on to a smaller christmas gift! Instead of topping with pecan halves, I topped the chocolate with plain almonds! Delicious. The perfect combination of salty & sweet.
