Souvlaki

Very traditional recipe, except Greeks don't use soy sauce. This is an old family recipe used and eaten with great pride, success & Tzatziki sauce (but don't use soy sauce.) You can also use pork and barbeque some potato slices in olive oil for a great side dish. Of course don't forget the bread. Opah!

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

This will be in my recipe box for a long time. I changed and added a few things too. I wasn't interested in the creamy part of the dressing, so I left it out and only added extra pesto. I also added black olives, small can sweet corn, and gorgonzola cheese. I took this to the office and there is nothing left, really good recipe, and great for the Texas summer heat. Thank you.

Chewy Granola Bars

Fabulous! I did what others suggested and omited the brown sugar, and I am so glad I did, it would have made it way too sweet. I also used wheat flour and unsalted butter. I agree the chocolate chips are not needed, because the sunflower seeds, pumpkin seeds, nuts, cranberries, raisins and other goodies were enough. I took these to my office and the woman loved it, I had to copy the recipe for them all. Thank you so much, this is a keeper, I can't wait to make it for my grand-daughter.

Really good cake. We did as suggested and used applesauce instead of oil, low fat sour cream and sugar free pudding and it still was wonderful. There were no left overs.

Peppy's Pita Bread

This is a very good recipe, and most of my pita's rose well. The only problem is they did not brown very well which gives them the presence of underdone. So, we grilled them slightly on the BBQ pit and they were fantastic. No changes in the recipe, just in the cooking.

French Bread

This bread is really good, and so easy to make. I taught my pastor's 15 year old son to make this bread, and his family loved it. The only change I made was the egg wash on the top of the loaf. I didn't like the egg wash, so I brushed the dough with olive oil and a pinch of salt, lightly before cooking and midway through. The oil allowed the bread to brown and gave it a better flavor than the egg.

Stuffed Bell Peppers, Greek Style

Being married to a greek from Greece for many years, I will tell you exactly what is missing from this recipe. When you are cooking the meat sauce, place a small cinnamon stick (not cinnamon powder)into the sauce. Allow the sauce to cook for a good 45 minutes, absorbing the wonderful-ness of the cinnamon. You can even add a few whole cloves. This addition applies to anything you are cooking with hamburger meat, example - spaghetti sauce, lasagna meat, stuffed zuccini, moussaka meat, etc. The taste you are trying to get comes from these spices. I guarantee it. Opah, and enjoy!

Delicious Ham and Potato Soup

Great soup. I made this (with bacon not ham, added carrots and veleeta cheese) on a cold rainy night. My daughter brought some of the local boys soccer team over, and there is barely enough left for lunch today. Very good, and I will make again.
