I've been happily married for almost 11 years, since I was 19. I have 2 boys and won't tolerate raising picky eaters, so they have eaten everything since they were a year old. I write mystery novels in my spare time, read and love to go for walks. I absolutely LOVE nature. I've lost over 60 lbs this past year...just by cooking healthier and walking!
My favorite things to cook
Just about everything! I'm not much of a fan of soups, but I recently found a few that I love. I really like "one dish" meals, cooking on the stovetop and sauteing. I got a recipe for "Roman Chicken" from the Everyday Italian lady and I make it almost once a week. YUM! My mother says I cook gourmet, I tell her I just cook well. :-D
My favorite family cooking traditions
My dad used to get hungry before bedtime and instead of whipping out a bag of chips, he usually got inventive in the kitchen. I used to love climbing out of bed and partaking in his yummy feasts!
My cooking triumphs
When my mother-in-law asks for a recipe of mine, that's a triumph in my book!
My cooking tragedies
I don't bake. That's why I married my husband...he's the baker. It's not that my baking turns out all that bad, but I turn into a helpless dolt. I HATE waiting for cookies and then repeating the cycle over and over again. I hate rolling out dough. I'm not sure if it's because I just don't like sweets and pastries all that much. Baking usually puts me in a bad mood, so getting me to make a cake is a huge tragedy.

Cranberry Chicken I
Okay, here's the problem I have with this recipe. A friend of mine gave me this recipe without the onion soup packet, whole canned cranberries instead of jellied, added pecans and baked it in the oven. It was WONDERFUL. I tried it this way yesterday. It tasted exactly the same with one exception. You know that onion taste that you can't get out of your mouth no matter how much you brush, floss, or pik? Stayed with me through today. I would definitely make this, taking out the onion soup mix and adding pecans. I love it with rice.

Chicken Tikka Masala
This is REALLY, REALLY good! I make it mostly for when company comes over because it seems like a lot of work. Today however, I really wanted it but didn't want the trouble so I bought a jarred Tikka Masala sauce. YUK. I threw the jar out and decided to follow this recipe, but instead of marinating the chicken (no time...) I diced the chicken and added the marinade ingredients, stirred it up a bit and threw it into a skillet. I added the remaining ingredients when the chicken was almost done. WOW! It was just as good this way, possibly even better since the chicken was more moist. I did end up substituting sour cream for yogurt because I didn't have any, but I would stick to the yogurt next time. Other than that, this will be the way I make it from now on. Oh! And I always double the sauce ingredients.

Slow-Cooker Chicken Tortilla Soup
This was a good start, however I found it a little bland. I ran out to the grocery store and picked up a package of Knorr spanish rice, cooked the rice in a separate saucepan and added it into the crockpot. I suppose I could have just tossed the rice right into the crockpot and cooked it from there but that would have been too easy. ANYWAY, it was really, really good after that. I'll definitely make this A LOT. I also used frozen, uncooked chicken and I added a can of pinto beans.
