Pumpkin Turkey Chili

Excellent and easy! I was unsure about the pumpkin, but it adds a nice flavor. My in-laws were surprised about the pumpkin. My husband liked the spice.

Mediterranean Barley Salad

I first followed the recipe exactly and then started messing around with i (more garlic, cilantro and black olives). The great thing is you can use any kind of grain (I like either th ebarley or brown rice) and teh longer it sits the better it gets.. Everyone who tries this LOVES it!

Hearty Hot or Cold Roasted Tomato Soup

This is easy, quick and better than Safeway!. I added a bit more garlic and a little less butter. It's a great way to use up tomatoes that aren't great looking.

Margarita Grilled Shrimp

I made this the first time and used Halibut and sauted it with the marinade and it was good, but not too much kick. The 2nd time, I used jalepeno olive oil and cut out the ground red pepper and grilled the shrimp - it was EXCELLENT! Also, since I didn't have tequilla, I used margarita mix with tequilla in it and it worked just as well. We have used this recipe 3 times in the last week alone.

Roasted Beet, Peach and Goat Cheese Salad

I couldn't find Walnut oil, so I used Blood Orange olive oil. The flavor mixed very well and we will use this recipe over and over. My 2 year old even loved it!

Porcupine Meatballs

Although the recipe was easy to follow, the end result was very disappointing. There was little to no flavor in the meatball itself - the flavor only came from the tomato soup, in which I added fresh parsley and onion. If I attempt this again, I will have to up the flavor of the meatball.
