Light Boo Cups

Quick and easy to make! I made this with my kids - they love to make these super special desserts! The started of with stirring the pudding until it thickened, then spooning some crumbs into their cups, taking turns spooning pudding in...the whole recipe ended up being such a fun activity that we all enjoyed! I love these types of recipes - and so do my kids!

Strawberry Banana Protein Smoothie

This is a great smoothie - It is based on "The Zone Diet" which gives the right balance of protein, carbohydrates, and fats per meal. The idea of the diet is to control insulin and blood sugar levels to keep you full longer. Its a great diet and works well!

Orange Romaine Salad

This was a nice fresh tasting salad! I love the fresh orange taste in this salad compared to other salads that use Mandarine oranges which give an atrificial and overly sweet taste. I reduced the oil and used about 1/4 cup olive oil, and I increase the honey to about 3 tbsp. I added some chopped red onion to give this salad a little more color - I will probably take "KymInNM" advice and add some thinly sliced fennel for some extra crunch and flavor next time. Thanx for the recipe!

Peanut Butter and Jelly Roll-Ups

My kids loved these!!!! They gobbled them up so quickly and it was so easy and quick to make. I made one with just peanut butter and one with peanut butter and fluff (fluffinuter!) I will make this again!!!

Barley Mushroom Risotto

Excellent recipe!...but I made some changes to make it a "one-pot clean up." I sauteed the onion, garlic and mushrooms in 1 tbsp. of olive oil. When it looked soft enough, I added the barley, miked it around a bit then added the stock. After the barley cooked and absorbed all the water, I added freshly chopped parsley and basil. Delicious!

This was really good! I quadrupled the recipe and made it for my kids when they came home from school. It was a big hit! I used frozen strawberries and frozen blueberries and only one banana. (I might leave out the banana next time. Great color!!!

Creamy Mango Sorbet

I made this exactly as stated. - The mango added little bits to the texture and was not smooth at all. The mixture was very liquidy and took a day to solidify. When I took it out - it was too solid to serve so i placed it back into my blender and needed to add some more liquid - so I added a bit of orange juice to get the sorbet moving around the blender. I let it blend a while to smooth out the texture, but the mango bits remained. This was OK but I won't make this again. I prefer the "5 minute ice cream" from this site which is so versatile.

Chocolate Covered Marshmallows

I love making these! I don't like to use chocolate chips - as the liquid firms up too quickly. Chocolate chips have an added agent in them to keep its shape - I use regular melting chocolate instead which melts to a thinner consistency and remains "wetter" longer than melted chocolate chips. I dip the marshmallows 1/2 way in the chocolate and then sprinkle them with rainbow sprinkles. It is always a big hit! Sometimes I also add some pink marshmallows.

Angie's Dad's Best Cabbage Coleslaw

Fantastic alternative to a heavy coleslaw! I used a bag of coleslaw (grated cabbage and carrots) and 1/2 a bag of grated purple cabbage to add color. I used 1/2 the dressing and from that - only 1/2 the amount of oil (i used olive oil). The salad needs to marinate for a number of hours for the cabbage to wilt and soften up a bit! Wonderful recipe!
