Easy Strawberry Napoleon

These were a great treat for the kids. If you are looking for something quick to make with the kids - this is it. If your looking for finger food - this is it. My kids love to make deserts. I set up a plate of saltines, a bowl of the whip and pudding and a plate of sliced strawberries. They had a great time assembling these. The only problem that I saw (the kids didn't seem to care) is that the top saltines kept on falling off... We had a lot of fun!

Apple Crisp II

Very good recipe - I made some modifications. I used tart granny smith apples, used lemon juice instead of vanilla (this also helped the apples stay whiter and not turn brown. I made 3x the topping and placed half on the bottom of the crisp and 1/2 on the top. Instead of the butter in the topping I used 1/2 the amount in apple sauce and half the amount in oil. Very good!

Middle Eastern Turkey Dogs

I made these twice. The first time I only used garlic and cumin to season the turkey dogs - my husband and i loved it, but the kids didn't like it. The second time I just added garlic and some Italian seasoning and the kids took to it! I only baked the turkey dogs and did not fry them. I placed them on the ends of skewers and my kids loved the idea of having "dogs on a stick!" I will make this again.

Corn and Black Bean Salad

Very good and tasty (and easy) salad to toss together in a matter of minutes! Next time I will make this salad ahead of time and refrigerate it. I added some freshly minced cloves of garlic. I like it as written, but next time I might substitute some lime juice for the balsamic vinegar.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

AMAZING!!!!!!!! Yum! This was so delicious! I have never made fish tacos before and am so happy I started off with this recipe! It was so flavorful and delicious! All of the combinations of flavors were fantastic together. (I cheated a bit and used ready made breaded fillets, but next time I might make make it exactly as written) I will be coming back to this recipe often!

Pita Pizza

What an easy way to quickly prepare dinner! My kids had a blast "prepping" their own pizza with what they preferred! I set out a few sauce, toppings and seasoning choices and they made their own individual pizzas. Next time I will take the advise of another reviewer and toast the pitas for a few minutes until they crisp up and then add the sauce and toppings to make a crispier pizza. We will be coming back to this recipe often!

Garlic-Cilantro Scrambled Eggs

This was really tasty!!! I love the fresh herb taste that really livened up the eggs! I used liquid egg whites and omitted the sour cream and milk. I just left it as an omelet and didn't scramble it. I will make this again.

Whipped Cream Cream Cheese Frosting

This was really good! I used 1/2 the amount of sugar. I also whipped up the whipping cream first and then incorporated all of the other ingredients. I tinted it pink - and it was really tasty!

Instant Strawberry Ice Cream

This was so good and so easy! My kids helped me make this and were so surprised at how fast I made ice cream! I have made this with various flavors - I made strawberry, raspberry and peach. I used 1/2 the amount of sugar in each ice cream flavor and it was sweet enough. It was very good! I will make it again!

Sweet Pepper Skillet

This was really good - I had some peppers that needed to be used up - so I made this - I added some thinly sliced celery and some carrots. I added some freshly chopped basil at the end. I served it with chicken and rice.

Egg Tostada

A quick and easy meal to prepare - I saw this recipe and 5 minutes later - I was eating it! I used liquid egg whites and added a little of the salsa to the egg whites. After I started to eat it, a lot of liquid (i guess from the salsa?)dripped out. Next time I will wrap it with some foil or parchment paper on the bottom to keep everything in. Good recipe.

Byrdhouse Dream Salad Dressing

We liked this dressing a lot - Tangy with a subtle hint of sweetness! I added some freshly chopped basil and parsley to the dressing. I cut down a bit on the oil and used EVOO instead of vegetable oil. Thank you!

Oatmeal Chocolate Chip Muffins

I like this recipe because of the high proportion of heart-healthy/good carb. oatmeal and the low amount of oil (as opposed to margarine) (i reduced the oil by half the amount. I also reduced the regular flour by 1/4 cup because of the oil left out, added some shakes of cinnamon and some vanilla extract. I left out the nuts as my kids are not such big fans for them. These were very good and my kids were very excited to have these for breakfast!
