Grilled Tilapia with Mango Salsa

Tomato Barley Soup

Great Soup! I added a can of black beans and zucchini. I also added tiny tofu squares (i cut them teeny-tiny and added it with the rest of the vegetables). It was really good and they were so cute floating in the soup. I will add them to other soups that I make that don't need to be pureed.

Very Berry Blueberry Smoothie

This was interesting... I left out the ice because I used frozen strawberries and a frozen banana. I prefer strawberries as the base of smoothies though...It made a beautiful color though!

Cilantro-Lime Rice

Very tasty! I sauteed an onion and some garlic, and add basmati rice to sautee a bit. When it was finished cooking, I added freshly chopped cilantro and dried cranberries. It was really good and super easy!

Spinach Enchiladas

Good. I made some changes - I sauteed the onion and garlic in olive oil instead of butter. I left out the sour cream and used marinara sauce. It was good - almost like a spinach lasagna.

Italian Style Flounder

Good - But I made some changes. I omitted the butter and the tomato (I don't like cooked tomatoes). I used olive oil instead, fresh basil and garlic. I spread it on the flounder and rolled it up. I baked covered to keep the moisture in.

No-Yolk Deviled Eggs

These were great! I changed the recipe a bit (I cheated) and just used store bought Chummus and pipped it into the egg whites! I sprinkled them with paprika and cumin! I think I put too much chummus in - next time I will try it with instant mashed potatoes with the add-ins suggested in the recipe.

Strawberry Cheese Pie

This was really good - I made some changes - I omitted the crust. I spread the filling in a free-form circle on the platter. I used toffuti cream cheese to keep it dairy-free. I omitted the almonds and almond extract and I froze the filling. Right before serving I placed the sliced strawberries on top. It was really good. I did not have to let it thaw out before slicing.

Cheese Blintzes

These were really good - but I made some changes to the recipe. Instead of bread, I used rectangular shapes wraps (this way I didn't have to cut of the crust or roll the bread flat. I used low fat cream cheese. Next time I will not ad the milk to the cream cheese mixture which made the mixture too thin. I followed other reviewers advice and didn't dip the blintzes into butter - Instead, I sprayed them with PAM and sprinkled them with sugar and cinnamon. They needed to bake longer than suggested.

Delicious Healthy Strawberry Shake

This was good and refreshing! I increased the amount of strawberries and used skim milk. I used a splash of lime juice instead of the vanilla and it gave a little tartness to the shake. I used some packets of splenda instead of the honey.

Annie's Fruit Salsa and Cinnamon Chips

I only made the Cinnamon-Sugar Tortilla Chips. They were really good and nice and crunchy! I used a pizza cutter to cut the tortillas - It was much easier and made a nicer/smoother cut compared to using a regular knife. It was so quick to make - and really satisfies the sweet tooth. (Keep an on the chips that they shouldn't burn)

Cinnamon Sugar Tortilla Delight

So quick and easy! I placed the tortilla rolls on a cookie sheet and into the oven at 350 for about 5 minutes. They were lightly crisped and delicious! I also made them as tortilla chips by cutting the tortillas into triangles with a pizza cutter. Also good - but I liked the roll ups better. This is a real quick fix when you are looking for something sweet and low fat to snack on.

Stuffed Shells I

Great recipe! A little more work than baked ziti - but the results are fantastic and the kids loved the look! I cooked the shells for only a few minutes, so that they were soft, but not fully cooked - so they would retain their shape and be a bit more stable hen filling them. I too placed all the filling in a large zip-lock bag and it was very easy to fill the shells. I topped the shells with mozzarella cheese the last 3 minutes of baking so that it would still be cheese and not too crisp. This is a keeper!

Peanut Butter Pie X

AWESOME! I made this as a frozen desert and it was so good! I used "Cookie Dough for Ice Cream (Eggless)" from this site as the crust and used toffuti cream cheese and non-dairy whipping cream to keep it non-dairy. I used powdered sugar instead of regular sugar. I added some cookie dough and chocolate chips to the batter and the top of the pie and drizzled the top with chocolate drizzle. I froze it for 12 hours and served it straight from the freezer! Really good!

Fluffy Two Step Cheesecake I

WOW! Amazing! I served it frozen - I made this for my guests and it was a big hit for the adults and the kids! I made some modifications - I used "Cookie Dough for Ice Cream (Eggless)" from this site as the base in a 9x13 pan. I kept the cheese cake non-dairy, so I used toffuti cream cheese instead of regular c.c., and used a 16 ox. container of non-dairy whipping cream. I used confectioners sugar instead of the regular sugar called for in the recipe. I followed the recipe's directions, and then added in some chocolate chips and little cookie dough balls to the mix. I placed it in the pan, topped with more chocolate chips and cookie dough and drizzled it with chocolate and served it frozen - It did not have to thaw out before serving. I have also made this recipe into a peanut butter cheese cake - by adding 3/4 cup of peanut butter to the recipe - always a hit!

Sugar Toasted Almond Spinach Salad

Award Winning Soft Chocolate Chip Cookies

Really good chocolate chip cookie!!!Super soft and delicious. But... I am still a huge fan of "Best Big, Fat, Chewy Chocolate Chip Cookie" from this site. Wither way you go - you will get a great cookie! I took other reviewers advice and has the eggs and butter at room temp (actually - I used smart balance non hydrogenated margarine). I also added some vanilla extract and 2 tsp. of baking powder (i don't know why - but that's what many reviewers said they did - (and gave good reviews) so I did that as well. I place the batter into the freezer for about 1 hour to firm it up before placing on a lined sheet. Watch out - they grow... leave enough room so they won't touch each other.

Krystal's Perfect Marinade for BBQ or Grilled Chicken
