Grilled Zucchini and Squash

Delicious! I made a few changes - I let the zucchini grill on an open grill and did not put it into the foil. I like the grill marks on them. I also used cooking spray instead of the butter to save some fat and calories. Delicious! I actually prefer the yellow squash to the green squash.

Unbelievable Chicken

I made the recipe exactly as stated. I cut the chicken into thin strips and on a wooden skewer. They came out great! Really tasty, not too tangy with all the vinegar, mustard, lime juice and lemon juice. It was not too sweet, not to tangy. Perfect!

Pita Chips

Fantastic! I lightly brushed some olive oil on the pita. (I used much less than 1/2 cup in total - but next time I will just spray the pita with PAM). I sprinkled it with zaatar seasoning and placed the pitas on the grill for 4 minutes per side. It was a great with our BBQ dinner!

Potato Soup with Spinach Dumplings

I added more vegetables to the soup (sweet potatoes, yellow and green zucchini, Lima beans, corn, carrots and fennel to make it into a hearty vegetable soup. I made the dumplings twice - the first one I made according to the recipe - I felt the crumbs were a bit to dry and wouldn't hold together in a ball, so I added the yolk. After these cooked through, they were almost like matzo balls, but more dense and they did fall apart a bit. I made a second batch - using matzo meal instead of the bread crumbs and I liked them much better. I also needed to add the yolk to the matzo meal-spinach mixture, but the dumplings stayed together and did not fall apart. If I make this again - I would season the dumplings to add more flavor - they were pretty bland and didn't absorb much flavor from the soup.

Roasted Garlic Cauliflower

Absolutely delicious! My 6-yr old loved this! I will make this again! UPDATE: I've made this again - but omitted the parmesan cheese and used freshly chopped basil in place of the parsley. Delicious!

Eggplant Parmesan I

I used cottage cheese instead of Ricotta - that is what I had on hand. I roasted the sliced eggplant in the oven to save the extra fat and calories from frying it. This was OK but I prefer the traditional eggplant parmesan. This one tasted like an eggplant lasagna....

Fruity Red Smoothies

This was so refreshing! I used crystal light fruit punch instead of the cranberry juice and it gave it a really nice fruitiness to the the drink, aside from the strawberries and raspberries. I like this shake a lot!

Easy Apple Cinnamon Muffins

These were very good! I shredded the apples and added 2 tbsp. of lemon juice to them before I added the apples to the batter. For the topping, I only used brown sugar, light earth balance margarine and old fashion oats. I baked at 375 instead of 400 for about 20 minutes.

Barbie Doll Cake

My daughter loved this! I made it for her 6th birthday. I did not have the wilton doll cake stand or the Pampered Chef Pan. I tried this once before with a bundt pan, but the Barbie was too tall and the hole in the middle of the bundt pan was too wide. I ended up using 2 pans - I borroed my neighbors Giant Cupcake Pan and made the cake from the top half/the frosting pan and placed that cake onto a 2nd cake made form a pie pan in order to give the cake more hight. It was the perfect size for the barbie! It also gave the dress a nice swirl from the cupcake pan! I wrapped the barbie's legs in plastic wrap and pushed her into the cake. I spread a thin layer of frosting on the cake and then made "marshmallow fondant" from this website to decorate the cake. I would recommend two things. Be careful with the barbies hair when decorating and if you use fondant, put it on the cake and then put the barbie in. I put the barbie in and then had to figure out how to get the fondant over the barbies head...it got a little messy, so I then took the barbie out, put on the fondant and then put the barbie in.

Marshmallow Fondant

I made this with MARSHMALLOW FLUFF!!!! I definitely recommend to do it this way! Based on the previous reviews of saying to wait till the melted marshmallows cooled, I skipped the melting the marshmallows and water step and I placed a whole container of marshmallow fluff into the refrigerator over night. The next morning, I sprayed my kitchen aid very well with PAM, dumped the whole container of Marshmallow fluff into the KA and food coloring and confectioner/powdered sugar as needed. This really was not that difficult or messy at all. When the fondant was at a good consistency, I placed it into plastic wrap and into the freezer for about a 1/2 hour. I then rolled it out and it rolled really nicely. I used this fondant to cover a barbie doll cake than I made for my daughter's birthday! I spread a very thin layer of regular frosting onto the cakes surface to make sure the fondant would stick to the cake. It came out great!

I really like the tanginess from the lemon juice! I used frozen strawberries and bananas. I also used skim milk instead of the condensed milk and added some splenda. Nice and refreshing!

Seven Layer Gelatin Salad

It came out looking nice - but we didn't like it. Instead of evaporated milk, i used non-dairy whipping cream to make the lighter layer of the jello. If you make this recipe - make sure you have a lot of time on hand and things to do while you wait for the layers to solidify, as there are many steps.

Black Magic Cake

This is a great cake - exactly like the "Hershey's ® 'Perfectly Chocolate' Chocolate Cake" and "Deep Dark Chocolate Cake" from this site - only this calls for buttermilk and dark coffee and the others call for milk and boiling water. I did not taste a difference between this and the other cake. It is so moist and very fluffy. I made this into a barbie cake for my daughter's birthday. My "go-to" chocolate cake.
