Maple Salmon

Very Good! Instead of getting another pot dirty - i just added about 1/2 tbsp. of corn starch to the marinade and let it cook with the salmon. It thickened up and was delicious. I cooked the salmon covered with tin foil and it came out very soft and moist.

Mushroom Rice

This was very good - I made a couple of changes. I used olive oil instead of butter to saute the mushrooms. I used onions instead of green onions. At the end, i added both freshly chopped parsley and basil. It was very tasty.

Spiced Pears and Pomegranate

This was delicious! I used Yellow Delicious Apples instead of pears (that's what I had on hand) - but I will try it next time with the Pears. I liked the nutmeg but my kids were unfamiliar with it and didn't like it. Next time I will just leave it out. This is VERY pretty and I love using Pomegranates when they are in season!

Muffaletta Pizza

This was very good - I did modify it though. I did not use any of the deli meats - and I only the mozzarella cheese. I used Trader Joes herb Pizza dough and followed the rest of the recipe as stated. My husband and I loved it. We like the "sauceless" pizza. I make vegetable pizza quite often - but I usually top the dough with vegis and then sprinkle on the shredded cheese the last 2 minutes of baking. I really liked this recipe's method of prebaking the pizza crust and then mixing the vegis with the shredded mozzarella cheese - It was delicious! I will be making this again!

Fat Free Refried Beans

This was quite easy! I too used pinto beans in stead of the black beans. I sauteed an onion and garlic on low heat until translucent. I added the other ingredients including the cumin and mashed it up. I used it to fill a wrap with guacamole and shredded lettuce.

Chocolate Scotcheroos

These are really good! I have made it as written and have also used it as a "crust" for an ice cream cake. I sprayed a spring form pan with pam, spread a thin layer of the chocolate schotcheroo on the bottom, spread a layer of soft ice cream on top, placed the spring form pan in the frezzer for about 15 minutes until the layer set. I then sprinkled another layer of the chocolate schotcharoos over the ice cream and spread a second layer of a different ice cream on top. I used the remaining chocolate schotcheroo to decorate the top of the cake, placed it in the freezer for 24 hours. the cake was amazing and the chocolate schotcheroos were delicious and added a really nice crunch to the ice cream cake! yumm!!!

Microwave Caramel Popcorn

I made this recipe to the "T"!!!! Fantastic! This was so fast and so easy to make! this will be my "go-to" caramel popcorn recipe. No more with the slow oven way...! I used Smart Balance Non-Hydrogenated Margarine. It work great! I might start to cut back a little on the margarine as I make this more often. I used a Trader Joes Brown Paper Shopping Bag as my brown bag and it worked great!!!!! Make sure the caramel syrup boils for a bit in the mircowave instead of taking it too early. It needs time "cook" and get to the "soft-ball" candy stage in order for the recipe to come out as stated. After I poured the caramel onto the popcorn, i shook it a bit, but i needed to then use a spoon to get every popcorn coated. It worked great! Ty for the great recipe!!!

Coconut Lime Rice

I did not like the flavor of the coconut milk combined with the saltiness of the chicken stock. Not our taste. I probably would have preferred the sweetened version that can be found on this website - it adds a little bit of sugar and uses water instead of chicken stock.

Best Ever Split Pea

Smooth and Creamy Peanut Butter Pie

Delicious! I used 1 tub (8 oz) toffuti cream cheese instead of regular cream cheese and I used reduced fat peanut butter. I topped it with chocolate chips, pieces of "Cookie Dough for Ice Cream (Eggless)" from this site and drizzled it with "chocolate glaze I" from this site. I served it frozen, straight from the freezer and it was delicious!

I love this recipe! I always drizzle it on top of my ice creams! I also drizzled it on top of chocolate covered blueberries from this site - but I used white chocolate chips for the drizzle. I usually double, or even triple the recipe.

Grilled Chicken Kabobs

Delicious! I marinated the tenders and then froze them until the day I was ready to grill. I decrease the oil to 3 tbsp. of olive oil. These were delicious!

Chocolate Covered Pretzels

I made this with baking chocolate and skipped the cream. If you use chocolate chips - you will need some cream or margarine or butter when melting because chocolate chips have an additive agent to them that helps keep it shape when exposed to heat as opposed to baking chocolate or chocolate bark. the kids loved these!!!

Chocolate Covered Blueberries

These were good. I drizzled the top with melted white chocolate chips mixed with some corn syrup. I liked the crunch of the refrigerated chocolate with the "pop" of each fresh blueberry!

Grilled Chicken Salad with Seasonal Fruit

This was sooo good! I made this salad with left-over "Yummy Honey Grilled Chicken (kabobs)" recipe from this site. It was so delicious! I made a few changes - I added diced red onion, Persian cucumbers, and chopped sugar snap peas to the salad part. I changed the dressing to reduce the sugar and oil - I used 1/3 cup red wine vinegar, 1/3 cup sugar and 1/3 c. olive oil. I added the other dressing ingredients that were called for in the original recipe. I will make this again! Great dinner for leftover grilled chicken!

To Die For Blueberry Muffins

Delicious! These are really good muffins! I chose this recipe because it called for oil as opposed to margarine. I followed the muffin ingredients to the "t"! I made a variation of the topping - using rolled oats instead of flour and light margarine (earth's balance light). This is the exact same recipe as "Easy Apple Cinnamon Muffins" from this site, only with blueberries. The batter was thick and easy to scoop up with an ice cream scooper and place into muffin cups. I reduced the temperature to 375 and baked them for about 18-20 minutes. Great recipe! (next time i might add some lemon juice or lemon zest to the batter to get more of a lemony flavor)
