This was really good. I took "busymommy's" advice and placed the butternut squash into a bag, sprinkled 2 tbsp. of olive oil in it, some salt and pepper, and some sprinkles of cumin (about 1/2-1 tsp.). It was very difficult to cut the butternut squash into strips. Next time I will have to remember to use my food processor - which has a french-fry mode - too bad I didn't think of that earlier.. otherwise I will just cut it into squares.
